Ingredients
- 3 tablespoons olive oil, plus more for serving
- 2 carrots, finely chopped
- 1 medium yellow onion, finely chopped
- Kosher salt and freshly ground black pepper
- 3 cloves garlic, minced
- 2 tablespoons ground cumin
- 1 tablespoon harissa, or more to taste
- 1/2 teaspoon smoked paprika
- Pinch crushed red pepper flakes
- 1 tablespoon tomato paste
- One 28-ounce can or carton chopped tomatoes
- 1 teaspoon sugar
- 1 cup alphabet pasta
- 3/4 cup vegetable stock or broth
- A few handfuls crumbled feta
- Handful chopped fresh flat-leaf parsley or cilantro (or a mix)
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the carrots, onion and a pinch of salt and cook, stirring, until soft and translucent, 10 to 12 minutes. Add the garlic, cumin, harissa, paprika, pepper flakes, a good pinch of salt and a few turns of black pepper and cook until it’s all dreamy and smelly, about 2 minutes. Stir in the tomato paste, then the chopped tomatoes and sugar. Reduce the heat to low, then stir in the pasta and stock. Cover and simmer, stirring occasionally, about 15 minutes.
- Sprinkle bowls of soup with black pepper, drizzle with olive oil and top with the feta and herbs.

I would use less seasoning when it comes to the cumin and harissa. I made this for my toddler not realizing the heat. I added Heavy cream trying to take down the heat.
I made a little change and added little meatballs, this recipe was so yummy!! The hubby wolfed it down!

Easy to make, but as a novice with spices, I didn’t realize exactly how spicy this would be. I looked to the reviews for help and noticed someone mentioned that Molly only used 2 tsp of Cumin on the show, but the recipe above calls for 2 Tbsp. Otherwise, I’ve added more veggie stock to help tone down the fire. I’d try the recipe again, but would want to determine the correct spice measurements to use. *To anyone looking for the alphabet pasta, I found it in the Kosher aisle of my grocery store. It’s too cute!!!
Tasty and easy. Took just as long as the recipe states. I think the harissa is the key ingredient and I’d add more next time. I dropped the cumin as the reviewer noted from tablespoons to teaspoons. The alphabet pasta was not visible, which reduced the cute factor a lot. It just vanished into the tomatoes. I used top quality tomatoes, Delallo Disaronno tomatoes, so maybe the liquid was too saucy and obscured the alphabet. The feta was great and we used cilantro: that was perfect flavor compliment.
Not impressed enough to make it again. Very spicy. I used Pastina because I couldn’t find alphabet pasta but I doubt that made a big difference. The main taste is “heat” and it’s kind of one note.
