Roasted Shrimp with Cherry Tomatoes

Ingredients

  1. 1 pound peeled and deveined shrimp, tails on
  2. 2 cups cherry tomatoes
  3. 2 cloves garlic, thinly sliced
  4. Olive oil, for drizzling
  5. Kosher salt and freshly ground black pepper
  6. 1/2 lemon

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Put the shrimp, cherry tomatoes and garlic on a baking sheet, then drizzle with olive oil and toss. Season with salt and pepper.
  3. Roast until the shrimp are opaque and the tomatoes begin to burst, 10 to 12 minutes. Finish with a squeeze of the lemon half.

This is a great simple and healthy recipe with easy clean up. Loved the flavors of the garlic, shrimp and tomatoes. Next time I’d serve it over a little rice to make it even better.

Super easy and light.  We served over rice.  However, I would like something a bit more flavorful.  We added some lemon zest and chives, but still felt a little lacking.    I would make again, but modify to add some additional flavor.
