Fried Green Tomatoes

Ingredients

  1. Vegetable oil, for frying
  2. 2 green tomatoes
  3. 1/3 cup all-purpose flour
  4. 1/4 teaspoon cayenne pepper
  5. 1/4 teaspoon garlic powder
  6. Kosher salt
  7. 2 large eggs
  8. 1 tablespoon milk
  9. 1 1/2 cups panko
  10. Ranch dressing, for serving

Instructions

  1. Fill a large Dutch oven or skillet with 1/2 inch of oil and heat over medium-high heat until a deep-fry thermometer registers 350 degrees F. Line a plate with paper towels.
  2. Slice the green tomatoes 1/2 inch thick. Whisk together the flour, cayenne, garlic powder and 1/2 teaspoon salt in a shallow dish. Whisk together the eggs and milk in another shallow dish. Put the panko in a third shallow dish. Dredge each tomato slice in the flour, then egg, then panko. 
  3. Fry the green tomatoes, turning, until golden, 3 to 5 minutes. Transfer to the prepared paper towel-lined plate. Serve the fried green tomatoes with ranch dressing.

Great southern flare, use a little less Cajun seasoning so there’s not as much heat and the tomato flavor comes through.
