Ingredients
- 6 Roma tomatoes, halved
- 1/4 cup olive oil
- 2 cloves garlic, finely chopped
- 3/4 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon red pepper flakes
- Fresh basil leaves, for garnish
- Fresh oregano leaves, for garnish
- 1/4 cup fresh basil leaves
- 1/4 cup extra-virgin olive oil
- 2 tablespoons fresh oregano leaves and tender stems
- 1 tablespoon capers
- Juice of 1 lemon
- Kosher salt and freshly ground black pepper
Instructions
- For the tomatoes: Preheat the oven to 400 degrees F.
- Place the tomato halves in a bowl. Drizzle with the olive oil, add the garlic, salt, black pepper and red pepper flakes and toss to coat. Arrange them on a baking sheet cut-side up and roast for 30 minutes.
- For the herb drizzle: Meanwhile, add the basil, olive oil, oregano, capers, lemon juice and some salt and pepper to the bowl of a food processor and blend until smooth and pourable. Taste and adjust the seasoning if needed.
- Arrange the roasted tomatoes on a platter and top with some of the herb drizzle. Garnish with fresh basil and oregano leaves.

Absolutely delicious! Made these for a stand alone item and also to go with pasta and meatballs. For my pasta, I made extra of the pesto from this recipe to toss the pasta in and topped with a little freshly grated cheese. So many ways to enjoy this recipe!
This was fantastic! I did not have a problem with runny tomatoes as mine were pretty firm. I removed whatever seeds I could easily get to then salted and put in a colander to drain the excess.
I followed this to the letter and it was fantastic. After the cook time, i put a slice of mozzarella and prosciutto on top of each one and broiled it to melt the cheese and crisp the edges of the meat. Then the dripping make a great coating for a pasta the next day.
Excellent! My wife who doesn’t like stewed r roasted warm tomatoes LOVED this. I will make it again for a light lunch or appetizer. I am also going to make it into a pasta dish, Triple the recipe. Cut it up and serve over angel hair pasta!!
This is even more awesome than the title of the recipe suggests! Followed it exactly and it was perfect! Served as a side dish. Make this-it has so much flavor and it is super easy!
Very simple, tasty & elegant looking when spread out on your serving dish and garnished with fresh basil leaves. I didn’t have crushed pepper flakes, so omitted. The drizzle makes about four times what you’ll need, but I’m keeping the leftover to use with another dish this week.
My only criticism is that the halved Roma tomatoes are too wet & soggy when roasted. Maybe I’ll cut down the time roasting next time.
