Ingredients
- 7 ounces corn syrup
- 2 eggs
- 8 ounces mascarpone
- 1/2 cup heavy cream
- 2 ounces cream-based liqueur
- 2 1/2 ounces cold brew
- 1 1/2 ounces simple syrup
- 1 ounce espresso
- 2 tablespoons Madagascar vanilla extract
- Ladyfingers, for dipping
- Cocoa powder, for dusting
Instructions
- For the tiramisu cream: Heat the corn syrup to 105 degrees F. Beat the eggs in a stand mixer, then with the mixer on high speed, slowly pour in the corn syrup.
- Beat the mascarpone, heavy cream and cream liqueur together until stiff. Fold together with the egg mixture. Refrigerate.
- For the espresso: Mix together the cold brew, simple syrup, espresso and vanilla in a bowl.
- Soak the ladyfingers in the espresso, then place in a glass jar. Top with a dollop of the cream, then dust with cocoa. Repeat until full. Repeat with three more jars. Dust with cocoa powder.
