Ingredients
- 2 oranges, plus 1/2 cup fresh orange juice
- 1 1/2 cups wild rice blend
- 1 tablespoon extra-virgin olive oil
- Kosher salt
- 1/3 cup chopped mint
- 1/3 cup chopped pistachios
Instructions
- Bring 2 1/2 cups water and the orange juice to a boil. Add the rice, olive oil and 1 teaspoon kosher salt and simmer, covered, until the rice is tender, 20 to 25 minutes. Let cool slightly, then stir in the mint and pistachios. Slice the peel off the remaining 2 oranges and cut out the segments; add to the rice and squeeze in the juice from the membranes. Toss and season with salt.
