Carrots with Dill Yogurt

This simple side dish celebrates the pure and clean flavor of tender, sweet carrots. To really make the carrots shine, follow our lead and top them with a spicy and tangy yogurt dressing that contains notes of coriander and a pop of fresh dill.

Ingredients

  1. 2 pounds carrot
  2. Kosher salt and freshly ground pepper
  3. 3/4 cup plain whole-milk yogurt
  4. 2 tablespoons chopped dill
  5. 2 tablespoons fresh lemon juice
  6. 3/4 teaspoon ground coriander

Instructions

  1. Peel the carrots and thinly slice on the bias. Cook in boiling salted water until tender, about 6 minutes. Drain, blot dry and transfer to a serving bowl.
  2. Stir together the yogurt, dill, lemon juice and coriander; season with salt and pepper. Spoon over the carrots.
