Kalbi Short Ribs in Da Kitchen Teriyaki Sauce

Ingredients

  1. 3 pounds beef short ribs, 3/8-inch cut
  2. 1/2 cup sugar
  3. 1/4 cup soy sauce
  4. 2 cloves garlic, grated
  5. 1 tablespoon sweet chili sauce
  6. 1 teaspoon grated fresh ginger
  7. 1/2 orange
  8. Cooked rice, for serving
  9. Green onions, thinly sliced, for garnish
  10. Sesame seeds, for garnish

Instructions

  1. Place the beef short ribs in a re-sealable gallon bag. Add the sugar, soy sauce, garlic, sweet chili sauce, ginger and 1/2 cup water to the bag. Squeeze half of the orange in the bag, and add the remaining orange rind. Marinate the short ribs in the refrigerator for at least 12 hours, preferably 24 hours, so the juices and flavors can soak into the short ribs.
  2. Preheat a grill to medium heat.
  3. Cook the short ribs until lightly charred on both sides, 4 to 6 minutes. Serve immediately with rice and garnish with sesame seeds and green onions.

Just wanted to update the review, theres a post on Aug 2nd 2021 that says Da Kitchen is closed. I was there today April 1st 2024 and Da Kitchen is open. I ordered the kalbi and they were probably the best i have ever had and i’ve eaten them all over the world to include South Korea. I look forward to making these when i get home!

I was looking forward to making these, but now I’m not sure because the recipe posted here does not match what they did in the video (for example, no sweet chili sauce in the video; “remaining” orange rind not added to the sauce; sugar not dissolved in warm water; garlic/ginger is chopped not grated). My concerns begin with putting the sugar and other things into the bag with the ribs before dissolving the sugar; what?! Don’t suppose there’s any chance of getting an answer before I ruin my ribs?

Have made these several times. It always tastes better at Da Kitchen. It is closed in Kahalui now so it’s nice to have this recipe.

Yum! I used Sambal Oelek (chili paste) instead of sweet chili sauce but otherwise followed the recipe. Did marinate for 24 hours, grilled up on gas BBQ. Will definitely make this again.
