Sloppy Joe Tacos

Ingredients

  1. 3 tablespoons oil or other fat
  2. 2 pounds ground meat of your choice, such as turkey, lamb, pork, beef, chicken, etc.
  3. 1 teaspoon cayenne or smoked paprika
  4. 1/2 teaspoon ground cumin
  5. Salt and pepper
  6. 1/2 cup chopped onion (about 1 small)
  7. 2 cloves garlic, minced
  8. 1 cup tomato product of your choice, such as sauce, crushed, diced, etc.
  9. 1 cup liquid of your choice, such as water, stock, beer, etc.
  10. 1/4 cup mustard
  11. 1/4 cup brown sugar, optional
  12. 6 to 8 tortillas or buns
  13. Optional toppers: diced avocado, chopped tomatoes, fresh cilantro leaves, lime wedges, sliced radishes, shaved cabbage, sliced jalapenos

Instructions

  1. Heat a large pan over medium heat and add the oil. When hot, add the meat, cayenne, cumin and some salt and pepper. Cook, without stirring, until the meat is browned on the bottom, about 5 minutes. Break it up with a wooden spoon, then add the onions and garlic and cook for 2 more minutes.
  2. Add the tomato, liquid, mustard and sugar, if using, to the pan and bring to a simmer; simmer for 5 minutes. 
  3. Toast the tortillas or buns. Serve the sloppy joe mixture on the tortillas or buns and top with your favorite toppers.

So delicious! I used organic ground chicken, ketchup and omitted the brown sugar and used Dijon mustard. Topped with cilantro and avocado served on corn tortillas!

I was surprised how good this was! Everyone loved them. I used ground turkey, chicken stock, canned tomato sauce and I did use the brown sugar…wouldn’t change a thing! I topped with tomato, avocado, jalepeno, cilantro, red onion and shredded lettuce for crunch (didn’t have cabbage on hand). I used both corn and flour tortillas, both were good. Excellent.

Delicious!  Addded some diced carrots and green bell pepper to amp up veggies.   Served in a taco boat with sour cresm and fresh avocados!  Definitely a ten!  Today we took leftovers (only a pint left!) and put it on top of blue tortilla chip nachos!
