Yield: 4 to 6 servings

Ingredients

  1. 1 cup mayonnaise
  2. 1/4 cup milk
  3. 4 tablespoons lemon juice
  4. 1 teaspoon garlic salt
  5. Oil
  6. 2 packages Tempura Batter Mix
  7. 1 can beer
  8. 1 teaspoon salt
  9. 1 teaspoon garlic powder
  10. 24 ounces boneless cod, cut into 2-inch pieces
  11. 6 corn tortillas
  12. 2 cups shredded cabbage
  13. 2 limes

Instructions

  1. For the sauce: Mix all ingredients together and set aside.
  2. Preheat a fryer or a deep pot halfway filled with oil to 375 degrees F.
  3. Mix 1 of the packages of batter, but only use 1/2 the required amount of water and use beer for the remaining amount instead. Add the beer until the batter becomes almost like a heavy cream consistency.
  4. Using the other package of batter add salt and garlic powder, coat cod pieces with the dry mix, then dip into prepared batter. Deep-fry for about 3 minutes, or until golden brown and cooked through.
  5. Place fried cod pieces on warmed corn tortillas, add white sauce to fish, a little shredded cabbage and a squeeze of lime, to taste.

Added hot sauce to the sauce, fried the tortillas a second for texture. Perfect, simple recipe.

The dressing is missing some something, but I can’t put my finger in it. But other than that- it was delicious!

Best fish tacos since I left California. I added a little hot sauce to the mayo mixture.

Delicious recipe. If it weren’t for the mess the deep frying made I’d give it a five. Next time I’ll bake the fish.
