Whipped Sweet Potato

Ingredients

  1. 1 medium sweet potato
  2. 1/2 cup lite coconut milk
  3. 1/2 teaspoon cinnamon
  4. Pinch freshly ground nutmeg
  5. 1/4 teaspoon grated orange zest
  6. Salt and freshly ground black pepper
  7. 1 tablespoon chopped walnuts, optional

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Prick the sweet potato all over with a fork, and then wrap in foil. Bake until soft, about 45 minutes. Remove from the oven and let cool.
  3. When cool enough to handle, halve the sweet potato and scoop out the flesh. Add the flesh to a food processor, along with the coconut milk, cinnamon, nutmeg and orange zest. Process until smooth. Season with salt and pepper. Fold in the walnuts if using.
