Kielbasa-Sweet Potato Foil Packets

Ingredients

  1. 1 pound fully cooked kielbasa, cut into 1-inch pieces
  2. 2 small sweet potatoes, peeled and cut into 1/2-inch chunks
  3. 1 large sweet onion, cut into 1-inch chunks
  4. 4 stalks celery, cut into 1 1/2-inch pieces, plus celery leaves for topping
  5. 2/3 cup dried apricots
  6. 6 sprigs thyme
  7. 3 tablespoons extra-virgin olive oil
  8. 1 1/4 cups fresh orange juice (from about 2 oranges)
  9. Kosher salt and freshly ground pepper
  10. 1/4 cup sherry vinegar

Instructions

  1. Preheat a grill to medium. Toss the kielbasa, sweet potatoes, onion, celery, apricots and 4 thyme sprigs in a large bowl with 2 tablespoons olive oil. Drizzle with 1/4 cup orange juice and season with 1/2 teaspoon salt and a few grinds of pepper.
  2. Tear off four 24-inch sheets of foil and fold each in half. Pile the kielbasa mixture on one side of each foil sheet. Fold the foil over and crimp the edges to seal well. Grill the packets, rotating them occasionally so they don’t burn, until the vegetables are tender, 18 to 22 minutes.
  3. Meanwhile, combine the vinegar with the remaining 1 cup orange juice, 1 tablespoon olive oil and 2 thyme sprigs in a medium skillet; season with 1/4 teaspoon salt. Bring to a boil and cook until syrupy and reduced to about 3 tablespoons, 5 to 7 minutes. Discard the thyme. Open the foil packets, drizzle with the sauce and sprinkle with celery leaves.

Little nervous about this recipe but it was so good. I cooked everything in
One large pot. Doubled recipe. Put sweet and russet potatoes. The oj and vinegar sauce made the recipe.

So yum! Can tell recipe is great as written but will share the changes I made. Added about three hands full of kale. Substituted 4-5 Trader Joe’s dried orange slices w rinds for apricots. (All I had available, but excellent!) Baked in foil packets for about 45 mins. Let stand 10 mins.

Great w sliced kielbasa OR chicken andouille.

SAUCE: Added red pepper flakes, substituted red wine vinegar w a splash of apple cider vinegar and 1/2 tsp raw sugar for the sherry vinegar.

This was really good. Nice and easy – instead of a bunch of foil packets I lined a cast iron skillet with crisscrossing foil and put all the ingredients in and sealed it up. It was a big hit, but I thought it needed a little something to balance out the sweet so I added some jalapeño powder to give it just a little kick. Perfect!

Recently moved & have no grill AND our oven isn’t working. So… Used the mini oven at 350, and a tube baking pan, covered with foil, for 60 minutes. Really yummy. Even DH likes it–juat not any celery! Will definitely make again.

I loved this recipe, I didn’t have Sherry Vinegar so I used balsamic. It was easy and the blend of flavors was so much better then the Polish kielbasa and mashed potatoes I grew up on. I will share this recipe with my Mom and make it many times this summer.
