Baked Sweet Potatoes with Dill Butter

Instructions

  1. Prick 4 sweet potatoes with a fork. Place on a baking sheet and bake at 400 degrees F until soft, 60 to 75 minutes. Mix 6 tablespoons softened butter, 1 tablespoon chopped dill, 1 small sliced scallion and 1 1/2 teaspoons grated lemon zest; season with salt and pepper. Cut open the potatoes and top with the dill butter.

I made this recipe. I already had sweet potatoes in the freezer. Heated them up and added this wonderful savory butter. It was simply the best! I love the sugar and cinnamon, but I don’t always want all the sweetness. I did not have any fresh dill and had to use dried. It was still a wonderfully different treat. Think I will make a batch, freeze in ice cube tray for later. I saved this recipe from several years ago. This tried it this week. The picture made it look so appealing.

Made these with dinner tonight. They were awesome and everyone devoured them. Love the dill and the touch of lemon with the sweet potatoes. Went perfect with our steaks and corn on the cob!
