Ingredients
- 2 large sweet potatoes
- Cooking spray
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1 squeeze fresh lemon juice
- 2 cups sugar
- 1 teaspoon vanilla
- 2 eggs
- 1 small can sweetened condensed milk
- 1 frozen (9-inch) pie crust, prebaked
Instructions
- Spray sweet potatoes with cooking spray and roast in a preheated 350 degrees oven for 35 minutes or until soft. Scoop out pulp. Mix pulp with cinnamon, nutmeg, lemon, sugar and vanilla. In separate bowl whip eggs and milk and fold into potatoes. Pour into pre-baked shell and bake at 350 degrees for 15 minutes. Allow to cool before serving.

I agree with all the ingredients, but I half the sweetened condensed milk and use whipping cream. The zest of the lemon, one additional egg and a little more vanilla extract. And one cup of sugar should be enough. . Other than that pretty good pie. Add the other ingredents for Great! pie…
