Spicy Sweet Potato Casserole

Ingredients

  1. 2 medium yams or sweet potatoes, sliced
  2. 1 tablespoon olive oil
  3. 1 tablespoon chopped fresh oregano
  4. 2 teaspoons kosher salt
  5. 1/2 teaspoon ground black pepper
  6. 1/2 teaspoon ground chipotle powder
  7. 4 cloves garlic, minced
  8. 3/4 cup heavy cream

Instructions

  1. Preheat the oven to 400 degrees F.
  2. In a large mixing bowl, toss the sweet potatoes with the olive oil, oregano, salt, pepper, chipotle powder and garlic until the potatoes are evenly coated. Arrange the sweet potatoes in a 9 1/2-inch round glass baking dish, arranging in overlapping, concentric circles, until the dish is filled. Cover with foil and bake until tender, about 30 minutes.
  3. Remove the foil and add the cream. Return the casserole to the oven and continue baking, uncovered, until golden with crisp edges another 20 minutes. Serve warm.

I’ve loved making this recipe so much that I use it as a starting point for a skillet meal. I roast sweet potatoes and onions with the chipotle and oregano, along with some fresh roasted corn. I add it to a skillet of Mexican chorizo and brown everything nice and golden. Add a little cheese if you want. Don’t get me wrong. Make the recipe first and enjoy it. Then experiment!

I have made this dish many times. I prefer using yams vs. sweet potatoes. Also, we dislike chipotle, so we leave it out. I double the oil, oregano, garlic, and cream. I bake covered 45 minutes, uncovered 30. This is on every holiday table. We love this dish, and it’s not difficult to make.

It’s a shame there aren’t more reviews of this recipe. I always go to this recipe because I love to cook sweet potatoes without marshmallows and brown sugar! I rarely make a recipe exactly, but this is one of those exceptions. It’s so easy and never disappoints!

wow, delicious!! I didn’t have chipotle powder so instead chopped up a chipotle in adobo sauce along with about a teaspoon of the sauce. sooooo good!
