Watermelon-Jalapeno Cooler

Ingredients

  1. 1/2 cup granulated sugar
  2. 1/2 jalapeno, stemmed, seeded
  3. 2 sprigs fresh thyme
  4. 5 cups chopped, seeded watermelon
  5. Ice, for serving

Instructions

  1. Combine 1/2 cup sugar and 1/2 cup water in a medium saucepan and cook over medium heat until the sugar dissolves, about 4 minutes. Add the jalapeno and thyme and let it infuse for 5 minutes. Remove the jalapeno and thyme and set aside.
  2. Pour the simple syrup and chopped watermelon into a blender. Blend until very smooth, about 2 minutes. Serve cold over ice and garnish with the sugary sprigs of thyme.

Thought it was interesting to try but we really didn’t enjoy it the way we thought. The watermelon flavor was just a little too over the top. Maybe the ripeness of the melon has something to do with it. Either way, give it a shot. It’s cheap and simple to create this unique drink.

This was GREAT! Although don’t expect a lot of heat from adding the chile to the simple syrup. You just get a faint taste of it at the end (we even used a whole serrano). However, we brought this to a 4th of July party and people just raved about it! It’s sweet for sure, but such a great non-alcoholic option for a party. Very refreshing 🙂

Yummy! We already had some cilantro-infused simple syrup on hand so we just used that and then added about 1/2 tsp of cayenne pepper. Great little kick at the end. Can’t wait to try it with her simple syrup next time.

Pretty good as is, but I blended the jalapeno into the drink for a little extra heat. Also, tried it with vodka and tequila. It is AWESOME with tequila. Next time: frozen margaritas!

This recipe was really good! My friend and I have been watching our calories so instead of 1/2 cup of sugar we did 1/4 sugar and 1/4 cup splenda or equal and it tasted delicious! My only negative feedback would be we couldn’t taste the jalapeno at all. Next time I am either going to use a whole jalapeno or probably blend in some of the jalapeno.
