Raffy’s Strawberries in Vinegar

Ingredients

  1. 1 pint fresh strawberries, hulled and quartered, or sliced
  2. 2 tablespoons sugar
  3. 2 tablespoons red wine vinegar
  4. 1/4 cup heavy whipping cream
  5. 1 teaspoon powdered sugar
  6. 1/2 teaspoon vanilla extract
  7. 2 tablespoons chopped fresh mint leaves, for garnish

Instructions

  1. For the berries: In a small bowl, toss the strawberries with the sugar and vinegar. Let the mixture stand at room temperature, stirring occasionally, for 2 hours.
  2. For the whipped cream: In a medium bowl, beat the heavy cream until it forms soft peaks. Add the powdered sugar and vanilla. Continue to beat until the cream holds stiff peaks.
  3. To serve: Spoon the strawberries and juices into 2 small glasses and add a dollop of whipped cream. Sprinkle with chopped mint and serve.

We loved this dish! I was surprised because I am not a big vinegar fan but we couldn’t stop eating it and I never thought I would say this…but like Raffy, I liked it better without the whipped cream!  We love it when Giada has Raffy on the show! She makes us laugh! Thank you Giada and Raffy!

I used two packets of Stevia in the Raw (would maybe use 1.5 for Sweetleaf as it is a bit stronger) for those who are wondering about the possibility of substitution, and it was absolutely delicious! This is a wonderful, easy dessert that will surprise and please your tastebuds!

This was such an easy and delicious recipe. I did not change a thing and my husband and I both loved it!! I told my husband Giada said that in Italy they use balsamic vinegar and he would like me try doing it that way next time.

I made this yesterday but omitted the whipped cream-I’m not doing an extra 30 minutes on the treadmill for it. LOL. It has a sweet/tart taste but it’s really delicious. Sweet because of the sugar and tart because of the red wine vinegar. I found myself constantly going back for more and more. My husband loves tart things and I love sweet things so needless to say, this snack didn’t last very long in our house: You won’t regret making this. If you had the opportunity to watch the episode, you’ll also know that it was very comical. I love her aunt Raffy. She’s very authentic and genuine! I loved her Italian spunky attitude.
