Ingredients

  1. 6 cups sugar
  2. 3 1/2 tablespoons cinnamon
  3. 2 teaspoons ginger powder
  4. 1 teaspoon nutmeg
  5. 2 teaspoons salt
  6. 6 cups whole pecans or walnuts
  7. Vegetable oil, for frying

Instructions

  1. In a large bowl combine sugar, cinnamon, ginger, nutmeg, and salt.
  2. Blanch nuts in boiling water for 1 minute. Drain and dry them off in a kitchen towel. Lightly toss them into the sugar mixture until coated. Remove nuts, and set aside the sugar spice mixture.
  3. Bring the oil in a deep fryer or a heavy-bottomed pan to 330 to 350 degrees-F (do not let the oil burn). *Hint: place 1 nut in the oil and when it starts to sizzle, add the rest of the nuts.
  4. Fry approximately 1 minute, the nuts will turn golden in color, and float. Remove from the oil and add directly to the sugar mixture and toss again. Carefully remove nuts and shake off excess sugar, let cool and serve.

I made this recipe using pecans. They turned out great. Chopped them for a chicken salad topping and they complimented it really well. They are also good on hot fudge sundaes.

I used pecans and they turned out great. You can actually make more than the 6 cups of nuts in the recipe with the amount of sugar mixture that the recipe generates.

Roll up your sleeves, though…it’s quite a messy good time!

I tired this recipe with Almonds…..what a failure…..sugar did not adhere to the nuts….ended with cooked almonds with a side bowl of sugar…Disaster

This is soooo good, but a bit messy and time consuming to make, but well worth it!

I used walnuts, and they were delicious. They are great as a garnish for salads or just snacking. You can store them in an airtight container or freeze.
