Ingredients
- 6 cups arugula
- 4 (4-ounce) cooked steaks, sliced
- 1/3 cup thinly sliced red onion
- 1 green bell pepper, seeded and thinly sliced
- 1/4 cup fresh lemon juice
- 3 tablespoons olive oil
- 1 tablespoon honey mustard
- 1 teaspoon finely grated lemon zest
- Salt and ground black pepper
- 1/2 cup shaved Parmesan (use a vegetable peeler to shave a block of cheese)
Instructions
- Arrange arugula on a serving platter. Top with steak slices, red onion and bell pepper.
- Combine lemon juice, olive oil, honey mustard, and lemon zest. Season, to taste, with salt and black pepper. Toss with salad greens. Top with shaved Parmesan just before serving.

This recipe is so easy and delicious!! Great use for leftover steak. I did use Red Bell Pepper instead of green bc I like the sweeter taste. The dressing was superb and I will def. use it for other salads! I used to love watching Robin Miller’s Show on FN. she was always one of my favorites and I have several of her cookbooks.
Fantastic salad, simple and delicious. I added some pine nuts & used shallot instead of red onion. Steak and arugula is always a great pair!
Easy and delicious!! I didn’t have red onion or peppers but I had just picked a ton of sugar snap peas from my garden so I used those instead. I didn’t have honey mustard so I used dijon and then squeezed in some honey. It was delicious!! I’ll make this again for sure. So easy and satisfying.

My hubby LOVES this recipe and requests it all the time. It was even the first meal he asked for after returning from his deployment to Iraq! It is so quick and easy to make and is always our go to weeknight meal.
I love the flavor combination of this salad. The lemon and parmesan and arugula and steak go so well together!!! An easy go-to meal for a oerfect weeknight dinner!!!
I took this simple salad to a dinner party where there were several salads. Mine was the only one gone at the end of the evening. (I served it as a side dish so I omitted the steak.) It was so easy to prepare but the flavors are terrific.
Prepared this recipe for my family and everyone loved it including my fussy husband. The dressing was very tasty and light. Will definitely keep this recipe and make again and again.
My family loved this salad! It was easy and extremely tasty. I love making my own salad dressings now, thanks to Robin. I added a red bell pepper for color. I’ll make this over and over.
