Whiskey Barbecued Flank Steak

Ingredients

  1. 1 flank steak, about 2 lbs., trimmed of fat and sinew
  2. 1 onion, sliced thin
  3. 2 teaspoons mesquite spice mix
  4. 2 tablespoons cider vinegar
  5. 2 tablespoons brown sugar
  6. 1 jar smoky style barbecue sauce (1/4 cup for marinade, 1 cup to add later)
  7. 2 dashes hot sauce
  8. 1/4 cup bourbon whiskey

Instructions

  1. Place flank steak in a pan to marinate. Mix all other ingredients in a bowl and rub all over steak. Let sit at least 1 hour (best if it sits overnight.) Heat up the grill. Remove excess marinade from meat and mix with 1 more cup of barbecue sauce. Simmer this for several minutes, then keep warm. Grill meat until medium-rare and let rest a few minutes. Slice flank steak across grain of meat into thin slices. Slather with sauce, and serve immediately. Accompany with baked beans and coleslaw.
