Michael’s Steak Sauce

Ingredients

  1. 2 tablespoons extra-virgin olive oil
  2. 1/2 cup onion, minced
  3. 1/2 cup tomato paste
  4. 1 1/2 cups raisin paste or whole raisins
  5. 4 1/4 cups cold water
  6. 1 tablespoon garlic, minced
  7. 1 1/4 cups balsamic vinegar
  8. 5 tablespoons applesauce
  9. 5 tablespoons roasted garlic paste
  10. 1 1/2 teaspoons mustard powder (dried mustard)
  11. 1/4 cup corn syrup
  12. 3 tablespoons Worcestershire sauce
  13. 3 tablespoons salt
  14. 1 teaspoon freshly ground pepper

Instructions

  1. Place extra-virgin olive oil in large sauce pot over medium high heat, add onions and reduce heat to medium. Saute onions until golden brown then add tomato paste, cook for 1 minute. Turn heat back to high, add remaining ingredients with exception of salt and pepper. Bring to a boil, reduce heat to medium and simmer ingredients for 10 to 15 minutes.
  2. Remove pot from heat, place into blender* and puree until smooth. Add salt and pepper.
  3. If the mixture is not smooth enough add a few teaspoons of water and puree until smooth.

Overall great steak sauce. I first made following directions. Very good, balsamic vinegar forward. Then I went rogue and played with it for a grilled pork chop: cut back on the water and only added as much as I needed to get the consistency I wanted. I added a bay leaf to the onion and garlic. Also added some brown sugar, molasses, and bourbon. Was careful not to make it too sweet or it would’ve flipped to a barbecue sauce feel. Love the idea prom a previous reviewer to add some heat. Red pepper flakes next time. Very versatile recipe. But also great as written.

The best steak sauce I have ever had. I omitted the roasted garlic paste because I didn’t have any and no time to make some. Also, added about 1 teaspoon red pepper flakes. My family loved it. Thinking of giving some for Christmas gifts this year.
