Turkey Sausage-Stuffed Delicata Squash

Ingredients

  1. 1 delicata squash, halved lengthwise and seeded
  2. 2 teaspoons olive oil
  3. 1 tablespoon olive oil
  4. 2 Italian turkey sausages (such as Jennie-O®), casings removed
  5. ¼ cup finely chopped celery
  6. ¼ cup finely chopped onion
  7. 2 cloves garlic, minced
  8. ¼ teaspoon dried sage
  9. ¼ teaspoon dried rosemary
  10. ¼ teaspoon dried thyme
  11. ¼ cup cooked wild rice (Optional)
  12. 2 tablespoons coarsely chopped dried cherries
  13. 2 tablespoons chopped fresh parsley
  14. 2 tablespoons grated Parmesan cheese

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with foil or parchment paper.
  2. Brush cut sides of squash with 2 teaspoons oil. Place cut-sides down on the baking sheet.
  3. Bake in the preheated oven until soft, 20 to 25 minutes.
  4. Heat 1 tablespoon oil in a medium pan over medium-high heat. Add turkey sausage. Saute, breaking up into small crumbles, until browned, 2 to 3 minutes. Reduce heat to medium and add celery, onion, garlic, sage, rosemary and thyme. Continue cooking until vegetables are soft, 4 to 5 minutes. Stir in rice, cherries, and parsley until mixture is warmed through, 1 to 2 minutes.
  5. Turn squash halves over so they are cut-side up. Fill with the sausage mixture and top with Parmesan cheese. Return to oven and bake until cheese is melted, 2 to 3 minutes.
  6. Substitute brown rice for the wild rice if desired. I usually keep single-serve precooked rice cups in the pantry to use for recipes like these that only require a small amount of rice.

I followed the directions exactly. I found it to be really bland and dry. Next time, after brushing the squash inside and out with oil, I would salt and pepper it. I would also add salt and fresh ground pepper to the meat mixture. Would use dried cranberries instead of the cherries.

Delish…I made with butternut squash (that I had on hand), some shredded cabbage and a little chunky tomatoes sauce, turkey sausage and turkey kielbasa and no cheese for hubby and sun dried/tomato cheese for me. It was really good and fast!
