Ingredients

  1. 1 acorn squash, halved and seeded
  2. 1 cup water
  3. 1 maple tea bag
  4. 4 ounces kosher turkey sausage, cut into bite-size pieces
  5. 1 tablespoon peanuts
  6. ¼ teaspoon vanilla extract
  7. 1 tablespoon dried cranberries
  8. 1 ½ teaspoons golden raisins
  9. 1 teaspoon light brown sugar

Instructions

  1. Place acorn squash, water, and tea bag together in a slow cooker.
  2. Cook in the slow cooker set to High until tender, about 1 hour. Remove squash flesh from skin and return flesh to slow cooker; discard skin and tea bag.
  3. Stir sausage, peanuts, and vanilla into squash mixture.
  4. Cook in the slow cooker set to High for 4 hours. Stir cranberries, raisins, and brown sugar into squash mixture until well combined.

This was just ok for me. It seemed to be missing something and I think it was a texture thing for me. This reminded me of mashed potatoes with stuff added, Tasty, but not something I would make on purpose. My only change was browning the sausage up a bit to get some texture and using an apple cinnamon tea with a bit of maple syrup added… could not find maple tea.
