Grandma’s Pumpkin Something

During Thanksgiving, my grandmother would frequently make a dessert she called “pumpkin something”; it tastes especially good when topped with freshly made whipped cream!

Ingredients

  1. 1 cup milk
  2. 1 cup white sugar
  3. 3 large eggs
  4. 1 teaspoon ground cinnamon
  5. ¼ teaspoon ground ginger
  6. ⅛ teaspoon ground cloves
  7. ½ teaspoon salt
  8. 3 ½ cups pumpkin puree
  9. 1 (15.25 ounce) package yellow cake mix
  10. 1 cup chopped pecans
  11. ¾ cup butter, melted
  12. 1 cup whipped heavy cream (Optional)

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13-inch baking dish.
  2. Whisk milk, sugar, eggs, cinnamon, ginger, cloves, salt, and pumpkin together in a large bowl. Pour into the prepared baking dish.
  3. Sprinkle cake mix and pecans on top of mixture; drizzle melted butter over the top.
  4. Bake in the preheated oven until browned on top, about 1 hour. Serve with freshly whipped cream.
  5. If pecans start to get dark, feel free to cover with foil while baking.
