Ingredients

  1. 1 tablespoon olive oil
  2. 1 (8 ounce) package button mushrooms, diced
  3. 1 medium bell pepper, diced
  4. 1 medium red onion, diced
  5. 1 medium carrot, diced
  6. 2 cloves garlic, minced
  7. 1 pound ground beef
  8. 10 cherry tomatoes
  9. 2 cups vodka marinara sauce
  10. 16 ounces zucchini noodles
  11. 1 cup baby spinach
  12. salt and ground black pepper to taste
  13. 1 teaspoon chopped fresh oregano, or to taste
  14. 1 teaspoon chopped fresh basil, or to taste
  15. 1 tablespoon grated Parmesan cheese, or to taste

Instructions

  1. Heat olive oil in a large pan over medium heat. Add mushrooms, bell pepper, onion, and carrot; saute until browned, 5 to 7 minutes. Add garlic and cook until fragrant, about 1 minute. Add ground beef; cook and stir until browned and crumbly, 5 to 7 minutes.
  2. Cut cherry tomatoes in half and add to the meat. Pour in vodka sauce and reduce heat to low. Add zucchini noodles, baby spinach, salt, and pepper. Cook and stir until spinach has wilted, zucchini is tender, and sauce is heated through, about 5 minutes. Add oregano and basil.
  3. Sprinkle Parmesan on top and serve.

There’s lots going on in this recipe — 15 ingredients called for. I only had 12 out of the 15 on hand and went for it, and it was delicious. I left out the mushrooms, fresh tomatoes, and the spinach. When you’re seasoning with salt, pepper, oregano, basil, and garlic, you can expect a good basic recipe that is adjustable to your tastes, and that’s what this one is. I will make it again and use mushrooms, and maybe try some other combinations. I felt that it didn’t need spinach, and actually if I had had it on hand, I would have preferred a side salad with it.
