Sauteed Spinach with Bacon and Onions

Ingredients

  1. 1 tablespoon bacon grease
  2. 1/2 yellow onion, finely diced
  3. 3 cloves garlic, minced
  4. 1 tablespoon red wine vinegar
  5. Pinch of crushed red pepper flakes (for a little spice because Trisha likes it)
  6. Salt and ground black pepper

  8. 12 ounces baby spinach

Instructions

  1. In a large saute pan, melt the bacon grease over medium heat. Add the onion and garlic and stir to cook until the onions are very soft, about 5 minutes. Add the vinegar, crushed red pepper flakes, salt and pepper and stir; add the spinach and toss it around, cooking until it’s just wilted, 1 to 2 minutes. Serve immediately so the spinach is wilted but not soggy.

Loved it, was easy to make and tasted great.  Mixed the three pieces of bacon in the onion garlic mix. Ate a whole bag of spinach in one meal for two.

My family´s favorite way to eat spinach! Well, I admit we add a pinch of sugar. oopsie.:) Also, I thought Trisha and Ree were a great team! I enjoyed watching them work together on this recipe!

I don’t know how long I’ve used this recipe but I make it 100% of the time I cook spinach–maybe every 2-3 weeks.  It’s quick, easy and delicious.  I always keep the ingredients on hand so that’s a bonus.  I heartily recommend it!

This is a very tasty side dish spinach recipe. I used olive oil instead of bacon fat just because I didn’t have any on hand. To “leemcbw2” comment I can only say that I saw none of those alleged “little digs” at Ree by Trisha. I thought both ladies got along well and they each have much to offer on their shows. Why read anything sinister in their interaction, when none was there? Again, spinach was delicious.

Really good/simple recipe we love. Have made it with all kinds of vinegars & chiles: always comes out great. Glad the recipe was up though: I couldn’t pick up much on any recipes on this show because of all the little digs Trisha kept throwing at Ree. Sounded like Ree shared some advice and Trisha didn’t like it from what I could pick up? We all learn all the time in cooking, so anyone should be open to it. Of all the shows Trisha needs help the most: she’s not a very good cook. The cake she made with that wafer flour she bragged over on the show looked like someone poured batter over smashed raw banana and threw it in the oven 5 minutes–nasty, raw & didn’t rise at all. Bad recipes I can overlook, since she seems to be progressing a little. But I’m getting so I don’t want to watch Trisha because it seems like everyone has to suck up to her. I watch for recipes, not “look-at-mes”. Somebody bought her own PR. Will give Trisha another chance but if I see this again that’s it.
