Apricot Salad

In a 7-quart Instant Pot, red beans and potatoes were precooked before being stewed with fresh vegetables. To complete the flavor, brown miso, yeast extract, liquid smoke, and a dash of vinegar are added just before serving. This vegan soup has a hearty umami flavor and a stew-like consistency thanks to the use of a range of fresh ingredients, including mushrooms, yeast extract, and miso. The preparation is time-consuming, but the result is worth it, and you also have soup for a week. The soup can be stored in the refrigerator for up to a week. ice leftovers. Though not attractive when thawed, it is still excellent.

Ingredients

  1. 1 (6 ounce) package apricot flavored Jell-O® mix
  2. ⅔ cup white sugar
  3. ⅔ cup water
  4. 2 (4 ounce) jars apricot baby food
  5. 1 (20 ounce) can crushed pineapple with juice
  6. 1 (8 ounce) package cream cheese, softened
  7. 1 (14 ounce) can sweetened condensed milk
  8. ⅓ cup chopped pecans
  9. 1 (8 ounce) container frozen whipped topping, thawed

Instructions

  1. In a small saucepan, combine gelatin, sugar and water. Bring to a boil and mix until dissolved. Remove from heat, add baby food and pineapple with juice. Stir, set aside to cool for 10 minutes.
  2. In a small bowl, combine the cream cheese and sweetened condensed milk, mix together until smooth. Pour into fruit mixture and whisk together.
  3. Stir in pecans and pour into a 9×13 inch pan. Refrigerate until chilled. Top with thawed whipped topping if desired. Sprinkle with pecans to decorate and cut into squares.

This is one of my family’s favorite salad! It does NOT need the extra sugar. It’s plenty sweet without it

This recipe has been a staple at our holiday dinners for years! I think that I can help with all the others on how to cut the sweetness. I add 16 oz of cool whip to the mixture and blend in to make it more of a fluff salad and then refrigerate. Try this to cut the sweetness and make a delicious holiday treat! Also, apricot baby food is impossible to find, I use apricots with fruit or apricots with apples.

I had to substitute peach jello and peach baby food because I couldn’t find apricot in my grocery store. I like the texture. The taste is okay but not as good as I expected. It’s a bit too sweet so if I made it again, I would reduce the sugar. But, with so many delicious congealed salads to choose from, I probably won’t make this one again.

I found this recipe in my late mother’s recipe box. I could not recall her ever making it but it sounded pretty tasty to me. I took it to a SS class ladies luncheon. Everyone loved and requested the recipe. I figured I could find it on line and not have to rewrite it before I printed it. Allrecipes saved me the trouble. The salad is really good and sweet enough to pass for dessert. It’s yummy!

Definitely try this one–it is not a typical jello salad. I folded real whipped cream into it, rather than topping with Cool Whip. I took it to Christmas dinner at Grandma’s, and not a spoonful was left. YUMMY.
