These pumpkin muffins for the Passover holiday are fantastic! My kids cannot tell that they are for Passover and not “regular” despite the fact that I have cooked them numerous times. Definitely a household favorite

Ingredients

  1. 1 (16 ounce) package smoked sausage
  2. 2 potatoes, cut into 1/4-inch slices
  3. ¾ cup chopped onion
  4. 6 slices bacon
  5. 1 ½ teaspoons minced garlic
  6. 2 cups kale – washed, dried, and shredded
  7. 2 tablespoons chicken bouillon powder
  8. 1 quart water
  9. ⅓ cup heavy whipping cream

Instructions

  1. Preheat the oven to 300 degrees F (150 degrees C).
  2. Arrange sausage links onto a baking sheet; bake in the preheated oven for 25 minutes, or until cooked through. Cut in half lengthwise, then cut at an angle into 1/2-inch slices.
  3. Place onions and bacon in a large saucepan; cook and stir over medium heat until bacon is crispy and onions are tender. Remove bacon and crumble; set aside.
  4. Add garlic; cook for 1 minute. Add bouillon powder, water, and potatoes; simmer for 15 minutes.
  5. Add crumbled bacon, sausage, kale, and cream. Simmer for 4 minutes and serve.

I enjoy Zuppa Toscana, and have never seen it made with a combo of smoked sausage and bacon like this, so I was really intrigued to try it. It turned out SO well! Really delicious, and the recipe was easy. I made it pretty much exactly as written, but with a little extra bacon.

I’m only leaving a 5 star review to knock down all the reviews complaining about it not being “healthy” (no where does it say HEALTHY!) or poor reviews when they changed everything about the recipe when making it. Yeesh, post your own recipe using Northern white beans, more kale, etc. the. I loved this soup exactly as written and make it about once a month!

Nice foundation but too high fat for any kind of reasonably healthy meal with both pork sausage and heavy cream. Therefore substitutions for heavy cream with either evaporated skim milk or part milk part cream etc are required. I added pre shredded carrots at the end to give some added crunch and colour. I also used only about half of the sausages suggested. Like others I prefer potatoes cubed but this is a personal choice.

I add more Heavy whipping cream and spinach instead of kale . I also add fresh cracked black pepper .

yikes. burned onions and just couldnt cook with all that bacon fat. tweeked this could be a fine recipe.

I made it EXACTLY as provided in recipe. Most excellent!!!! Thinking I might add shrimp to it next time since my boyfriend eats only seafood and steak and this would really WOW him!!! Easy. Easy to make. Great flavor!!!

This soup was excellent and easy to make. I altered the recipe, as I do not consume pork products. So, no bacon and I used chicken sausage. But, I have to say, didn’t miss the bacon at all. So flavorful and even better the next day! Great warm up on chilly nights.

I love making this dish more and more each time the only substitution is for the small tri-colored fingerling potatoes because I really don’t eat a lot of potatoes but every part of this dish is absolutely amazing and the broth is amazing

My family loves this. Tastes just like Olive Garden. I use ground pork sausage with Italian seasoning instead of the smoked sausage and I don’t add any bacon..
