This simple strawberry basil milkshake recipe combines the flavorful basil with the sweet strawberries for a very flavorful shake. Yes, spring has officially here, and this milkshake is like a berry and basil patch in a cup!

Ingredients

  1. 1 (32 fluid ounce) container chicken broth
  2. 1 (14.5 ounce) can diced tomatoes with lime juice and cilantro (such as RO*TEL®)
  3. ¼ cup shredded jalapeno Jack cheese
  4. 2 Roma tomatoes
  5. 1 carrot
  6. 1 stalk celery
  7. 1 slice onion
  8. 1 slice red bell pepper
  9. 1 avocado
  10. 1 clove garlic
  11. 1 teaspoon taco seasoning mix
  12. ½ teaspoon salt
  13. 2 sprigs fresh cilantro, or more to taste
  14. ¼ cup canned black beans, rinsed and drained
  15. ¼ cup canned corn, drained
  16. 1 ½ cups shredded cooked chicken

Instructions

  1. Combine chicken broth, diced tomatoes, jalapeno Jack cheese, Roma tomatoes, carrot, celery, bell pepper, avocado, garlic, taco mix, salt, and cilantro in a high-speed blender (such as Vitamix). Mix at level 10 for a few seconds, then at full speed until steaming, 6 to 7 minutes.
  2. Pour black beans and corn into the blender and pulse two times. Serve soup over shredded chicken.

A good soup with fresh flavors, but it does need some tweaks, both in flavor and execution. The blender jar is way too full to start with, right to the top lip, so I recommend using less chicken broth. As written, it is easily 6 large servings. The directions say to blend at speed 10, then at full speed. 10 is the highest a Vitamix goes. This also doesn’t scream taco soup to me, as the taco seasoning is barely noticeable, so I upped it to 1 tablespoon and that was perfect. I also recommend using double the black beans and corn, as well as using more than “a slice” of red pepper. This recipe could also be more specific – how big are we to chop the veggies? This info would be useful for beginners. Lastly, this isn’t spicy at all, even using jalapeño jack cheese and the Rotel. If you’re expecting spicy, you will need to add in some jalapenos or hot sauce. I topped it off with more jalapeno jack cheese and cilantro.
