With kielbasa sausage, cumin, chiles, and chili powder for some Southwest flair, this simple cowboy stew dish is flavorful and nourishing. Although it can be made quickly and easily on the stovetop, a day of simmering in a crockpot yields the greatest results. Serve with a straightforward green salad and cornbread.

Great. Recipe. Easy to prepare. I don’t care for pinto beans so I substituted garbanzo beans works terrific for me.
Fantastic! A huge favorite of my large family!
This was a really delicious stew. Definitely a keeper! The only thing I did different was eliminate the second can of corn and used extra mixed vegetables. I think next time I’ll replace half of the water with vegetable broth and maybe add some tomato sauce to thicken it up some.
Tasted great! Thank you! I did leave out pinto beans. Sorry I just don’t like them.
I lived in Texas for around ten years, so I’m used to recipes like this. I made it according to the Instructions in the recipe, and very much enjoyed it! The only difference is I used dried pinto beans, rather than canned beans. I soaked the beans overnight and cooked them in a slow cooker for ten hours.
my son absolutely LOVES this I make it at least 3 times a month
Enjoyed every bite!
My family loved this! I added beef bouillon cubes with the water. Added what frozen veggie mix I had on hand. Someone added cayenne pepper and so did I. Just a few shakes but it sure gave it that little kick. Keeper recipe for sure.
It’s a great recipe and easy to make. My Uncle Dewey made it just like this recipe many years ago and I had forgotten how good this is!
I had to adjust the recipe. It needed 2 tbsp each of chili powder and cumin. Then it was irresistible.
I did follow some other’s comments to add 2 tsp of worcestershire and 1 tsp of liquid smoke. This was a very tasty recipe.
I drained the corn and omitted the frozen veggies. I also substituted a portion of the water with chicken broth. I didn’t have any garlic on hand, but some of the canned tomatoes had roasted garlic in it, so I used this can. After browning the meat, I put everything on LOW in the crockpot for 5 hours. The only complaint I have is that it wasn’t long enough for the potatoes to get soft – but since I didn’t exactly follow the recipe, I didn’t decrease the stars. Otherwise, it had the right amount of spice, a good consistency and the family liked it.
Delish! I like spicy so I added jalapenos. I omitted the potatoes to make it a little more keto friendly. I love crock potting so this will definitely be a added addition to my crock pot recipes!
Makes enough to feed a herd….of Texas cowboys.
Made the recipe as-is. Turned out great. Everyone loved it. Will definitely make again.
It is one of those comfort dishes that people like. Made it for our mid-week church dinner. Lots of compliments. One man had 3 helpings. Unless I mis-made the recipe, you’ll need a BIG pot. Which is a good thing.
Turned out awesome! Added some chopped up Roma tomatoes from the garden. The family loved it and this is going to be a football party staple.
We loved this robust stew!!! Our friends wanted the recipe which speaks for its quality!!
I don’t usually comment if I highly modify, but this was fantastic. I halved the recipe and used what I had on hand for vegetables and beans (black beans, kale, fresh tomatoes, red potatoes, part of a habanero pepper), and added Worcestershire sauce. Great comfort food for a cold night.
Really good. Half is more than enough for a family of 5.
It was good but not what I expected. Seemed like an awful lot of corn. Really was nothing more than a beef stew. Enjoyed the taste but probably won’t make it again.
