This soup is delicious, but it also beats eating Christmas leftover turkey sandwiches for days on end!

Ingredients

  1. 1 tablespoon olive oil
  2. ½ cup minced onion
  3. 3 cloves garlic, minced
  4. 2 teaspoons chili powder
  5. ½ teaspoon cumin
  6. ½ teaspoon oregano
  7. 4 cups water
  8. 1 (10.75 ounce) can condensed tomato soup
  9. 1 (28 ounce) can diced tomatoes
  10. 1 cup salsa
  11. 4 cups shredded cooked turkey
  12. 1 tablespoon dried parsley
  13. 3 chicken bouillon cubes
  14. 1 (14 ounce) can black beans, rinsed, drained
  15. 2 cups frozen corn
  16. ½ cup sour cream
  17. ¼ cup chopped fresh cilantro
  18. 6 cups corn tortilla chips
  19. ¾ cup chopped green onion
  20. 1 cup shredded Cheddar-Monterey Jack cheese blend
  21. ½ cup chopped fresh cilantro
  22. ½ cup sour cream

Instructions

  1. Heat olive oil in a large saucepan over medium heat. Add minced onions and cook until onions begin to soften, about 4 minutes. Add garlic, chili powder, cumin and oregano and cook, stirring, for 1 minute.
  2. Stir in water, tomato soup, diced tomatoes, salsa, shredded turkey, parsley and bouillon cubes. Bring to a boil, then reduce heat, and simmer 5 minutes or until bouillon cubes dissolve. Add black beans, corn, sour cream and cilantro. Simmer for 20 to 30 minutes.
  3. Serve soup with crushed tortilla chips, chopped green onion, shredded cheese and additional cilantro and sour cream.

I used this soup as inspiration because I had a ton of leftover turkey, but I was missing sour cream and didn’t have time to go to the store. My family tends to like broth based soups, so I followed the recipe, doubling the spices, and leaving out the sour cream and cheese, and it was superb! I know it’s not exactly the soup recorded here, but the elements I used were wonderful, and I look forward to making it again with all the ingredients!

A good recipe to use the Thanksgiving Turkey leftovers! And a nice change from the creamy kind of soup. I had about 3 Lb of cooked turkey with bones in my freezer that I thawed overnight, so I used the bones with little bit of the attached meat to make a turkey broth in lieu of water and bouillon cubes. The other change I made was to reduce the tomatoes. I don’t like soups that are too “tomatoey”, so I skipped the tomato soup ( I never buy canned soups anyway) and used less diced tomatoes. Next time I will use 2 cans of beans to make the soup heartier. I served this soup with some avocado toasts.

It was kind of bland. I was able to improve upon the leftovers by adding a fair bit more spice, including 1/2 a packet of taco seasonings. I would make it again with more spice, as it turned out quite well after I’d doctored it up a bit.

This soup was superb. I used homemade turkey stock instead of water and chicken bouillon, and I substituted frozen fire roasted corn from Trader Joe’s for the frozen corn. My husband thought it was the best soup I’ve ever made. I will make it again and again. Joan C.

Family loved it! I followed your recipe with 2 exceptions. I couldn’t find the the jalapeño cream cheese so I used onion cream cheese and added a can of pinto beans (my family’s preference). Leftovers were just as good, and I served it with warm corn tortillas. I will definitely make this again! I’m happy you shared it!

Such a great recipe for left over turkey. I did modify the recipe to a crock pot version where I threw everything into the pot and let it slow cook until dinner time because I’m a busy mom of 3 and like to utilize the crock pot’s ability to make dinner time quicker. Added sour cream and cheese toppings to serve. Turned out soooo delicious will be making again for sure !
