Spinach and White Bean Soup

This recipe was created while I was on a cleanse. I hadn’t been satisfied with the recipes I’d tried, and I needed something nutritious and vitamin-rich that was also devoid of gluten, soy, and dairy. This one was successful! This dish can be reheated and freezes nicely.

Ingredients

  1. 3 cups baby spinach
  2. ½ cup chopped carrot
  3. 3 tablespoons olive oil
  4. 1 shallot, finely chopped
  5. 3 cloves garlic, minced
  6. 2 cups chicken stock
  7. 1 (15 ounce) can white beans, drained
  8. 1 teaspoon dried oregano
  9. ½ teaspoon dried thyme
  10. ½ teaspoon salt
  11. ¼ teaspoon ground black pepper
  12. 2 tablespoons lemon juice

Instructions

  1. Combine baby spinach and carrot in a food processor; pulse until finely chopped.
  2. Heat oil in a large pot over medium heat. Cook and stir shallot and garlic in the hot oil until fragrant, 2 to 3 minutes. Stir in spinach and carrot mixture, chicken stock, white beans, oregano, thyme, salt, and pepper. Bring to a boil, stirring occasionally. Reduce heat and simmer until flavors combine, about 20 minutes.
  3. Remove soup from heat and stir in lemon juice. Puree with an immersion blender until smooth.

I did not expect this to be a five-star soup with such humble ingredients, so I was pretty skeptical, but gosh, is this GOOD! Made it to have as a healthy side for grilled steaks, and I’m going to have to stop myself from eating it all before dinner! I had some fresh thyme in the fridge, so I used that instead, and I definitely recommend it!

I added Serrano pepper cause I like soups spicy! Including the seeds so it’s really hot.

This was so delicious! Even my kids devoured it. Not very pretty but so very tasty! I added some shredded chicken I made in the instant pot with just chicken stock and cut up carrots. My son made garlic bread to go along with it, which made this meal feel complete. It definitely went away from the intent of being a detox soup but kept a family meal filling and healthy. We will be making this one again!

Not quite sure about detox but this is healthy and flavorful. The thyme is a bit over whelming so I recommend using 1/4 teaspoon.
