Spicy Sausage Pumpkin Chili

I always have a ton of pumpkin leftover from Thanksgiving. I often purée it and can it. Here is a simple dish to help use up the extra. Serve with fresh bread and sour cream on the side.

Ingredients

  1. 2 tablespoons butter
  2. 1 onion, minced
  3. 3 cloves garlic, minced
  4. 1 tablespoon chili powder
  5. 1 teaspoon ground cumin
  6. 1 pound Italian sausage, casings removed
  7. 1 (15 ounce) can kidney beans
  8. 1 (8 ounce) can chopped mushrooms, drained and rinsed
  9. 2 cups canned pumpkin puree
  10. ¼ cup milk
  11. salt to taste
  12. ½ cup grated Cheddar cheese

Instructions

  1. Melt butter in a large skillet over medium heat. Add onion and garlic; cook and stir until onion is translucent, about 5 minutes. Stir in chili powder and cumin; cook and stir until fragrant, about 2 minutes. Add sausage; cook, stirring to break up clumps, until juices run clear, 5 to 8 minutes.
  2. Stir kidney beans and mushrooms into the skillet. Cook until heated through, about 5 minutes. Mix in pumpkin until warm, about 2 minutes. Pour in milk. Simmer until flavors combine, about 10 minutes. Season with salt; scatter Cheddar cheese on top.

I like to cook new things, especially if they’re quick. I followed this recipe word for word. Did anybody else have an issue with it coming out so “goopy”? Chili is supposed to be meaty. Maybe 2 cups of pumpkin is too much… What I made seems only eh .

I halved the recipe, omitted the canned mushrooms and added green pepper and celery diced finely instead. I used hot Italian sausage and we did not find it spicy, would increase spices next time and maybe add more beans, black beans I think would be nice. You cannot taste the pumpkin, it just makes it really thick, I added water instead of milk, needed to add more. Served with sour cream and shredded cheese. #AllrecipesAllstarsCanada #Pumpkincraze
