On chilly, wet, or snowy days, treat yourself to this delicious spicy cheeseburger soup! This hearty soup is an absolute favorite in my family. Cayenne’s spicy heat gives it a distinctive flavor. For a quick meal, this is also great to reheat in the microwave.

Ingredients

  1. 1 ½ cups water
  2. 2 cups peeled and cubed potatoes
  3. 2 carrots, grated
  4. 1 small onion, chopped
  5. ¼ cup chopped green bell pepper
  6. 1 jalapeno pepper, seeded and minced
  7. 1 clove garlic, minced
  8. ½ teaspoon salt
  9. 2 cubes beef bouillon, crumbled
  10. 1 pound ground beef
  11. 2 ½ cups milk, divided
  12. 3 tablespoons all-purpose flour
  13. ½ pound processed American cheese, cubed
  14. ¼ teaspoon cayenne pepper

Instructions

  1. In a large saucepan over medium heat, combine water, potatoes, carrots, onion, bell pepper, jalapeño, and garlic. Sprinkle salt and bouillon over mixture. Bring to a boil, then reduce heat, cover and simmer 15 to 20 minutes, until potatoes are tender.
  2. Meanwhile, in a large skillet over medium heat, cook beef until brown; drain.
  3. Stir cooked beef and 2 cups milk into soup and heat through. Combine remaining 1/2 cup milk with flour, stirring until smooth; stir into soup. Bring to a low boil and cook, stirring, until thickened, 3 minutes.
  4. Reduce heat to low and stir in cheese until melted. Season with cayenne.

We loved it. I used mostly same ingredients (+ 1/3 c. chopped celery and extra de-seeded jalapeño) but took some short cuts. Sautéed the onion, jalapeño & celery in unsalted butter for about 5 minutes, then added the 96% lean ground beef (& few shakes of Worcestershire), garlic, & store bought shredded carrot–time saver! Used 2 cups frozen O’Brien potatoes (little chunks of potato with onion and bell pepper) instead of fresh potatoes & the bell pepper–major time saver. Threw those in the pot, then used “Better Than Bouillon” (BTB) low sodium beef base (2 tsp) mixed into the 1.5 c. water (hot). Didn’t add salt. After simmering for 7-8 min, potatoes were done and stirred in milk/cream. I made a roux with the 3 T. flour and unsalted butter to cook out “flour” taste to thicken soup. Used mostly fresh cheddar instead Velveeta because I only had 2 oz of Velveeta, but won’t do that again. It melted, but was a bit of a gooey mess on the spoon and didn’t incorporate into the soup as well as Velveeta. Definitely needed a bit of seasoning. Used Cajun/Creole seasoning, cayenne pepper, black pepper, 1/2 t of BTB roasted garlic and 1/2 t. of BTB caramelized onion. Then it was heavenly. The hubs really liked it with fresh Italian bread and butter. Will be easier the next time I make it. Thanks for the recipe!

As is this soup is very good, so I rate it a solid 4 stars, but only 4 stars as I am compelled to make changes in order to make it stellar. It is easily adaptable to suit tastes and preferences, which is great, but I was looking for a “that’s the one!” recipe. (Though I should have figured since I don’t care for processed cheese, so that will be one of the changes.)

Lusciously delicious! I used some broth in place of water and skipped the granules. Topped the soup with bacon and croutons. Followed the recipe otherwise. Just enough heat from the jalapeño and cayenne. Really delicious and creamy!

I had no idea what to expect from this soup. I had looked at a couple different recipes to compare. I picked this one because it had some heat from a jalapeno and cayenne. It turned out very tasty and I would make it again. I did use 1 c of cream in the milk, just because I had it around. I grated a good quality white American cheese for the cheese. In the end it kind of reminded me of a chowder. Corn would have been a nice addition.

Excellent! I sautéed the onions, pepper and garlic with the ground beef then added to potatoes and carrots when they were almost done and boiled it for a few more minutes.

Love this soup! Instead of putting flour in the recipe I used corn starch for thinking it a little bit. Once dishes out, I topped each bowl with ketchup, mustard, and diced pickles. Amazing!
