Smoky Vegan Chili

In my home, this recipe has long been a favorite. It is highly healthful and easy to prepare. The adobo chili must be ordered. Most supermarket stores sell them in small cans in the Mexican cuisine section. You can double the recipe if you’d like because this chili freezes wonderfully.

Ingredients

  1. 2 teaspoons olive oil
  2. 1 onion, chopped
  3. 1 (12 ounce) package vegetarian burger crumbles
  4. 1 teaspoon browning sauce (such as Kitchen Bouquet®)
  5. 2 (15 ounce) cans stewed tomatoes
  6. 2 cups vegetable broth
  7. 1 (15 ounce) can chili beans
  8. 1 (15 ounce) can tomato sauce
  9. 1 (6 ounce) can tomato paste
  10. 1 tablespoon chopped chipotle chile in adobo sauce
  11. 1 teaspoon salt, or more to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Cook and stir onion in hot oil until tender, about 5 minutes.
  2. Stir burger crumbles and browning sauce with the onion until onion and crumbles are coated with sauce; add stewed tomatoes, vegetable broth, chili beans, tomato sauce, tomato paste, chipotle chili, and salt.
  3. Bring mixture to a low boil, reduce heat to medium-low, and cook until the tomatoes and beans are softened, 15 to 20 minutes.

I liked this chili. I added or adapted some things. I used tvp that I had soaked in water first. I used a homemade version of browning sauce and added extra adobe sauce and peppers. Thank you for the recipe.

My husband and I loved this chili! Didn’t even miss the fact that it was not made with meat. I had to substitute diced tomatoes because I did not have stewed. The chipotle gives it just the right amount of kick!
