a superb substitution for the typical red chili. Chicken, white beans, and green chiles with tomatillos are the main ingredients in this slow cooker chili. Serve with tortilla chips, sour cream, fresh lime wedges, shredded cheese, and shredded cheese.

Ingredients

  1. 1 tablespoon olive oil
  2. 2 medium Spanish onions, chopped
  3. 1 tablespoon ground cumin
  4. 1 tablespoon dried oregano
  5. 2 teaspoons ground paprika
  6. 2 teaspoons kosher salt
  7. 2 teaspoons black pepper
  8. 1 teaspoon chili powder
  9. 1 tablespoon chopped garlic
  10. 2 (4 ounce) cans chopped green chile peppers
  11. 3 ½ cups tomatillo salsa
  12. 6 cups chicken stock
  13. 1 pound cubed skinless, boneless chicken
  14. 3 (15 ounce) cans white beans, drained
  15. 2 (15.25 ounce) cans sweet corn, drained
  16. 1 (12 fluid ounce) can or bottle beer
  17. 1 bunch cilantro, stemmed and roughly chopped

Instructions

  1. Heat oil in a skillet over medium heat. Add onion, cumin, oregano, paprika, salt, pepper, and chili powder; saute until onion is translucent, 5 to 7 minutes. Add garlic; cook and stir until fragrant, about 1 minute. Transfer onion mixture to a slow cooker.
  2. Add chicken stock, chicken, beans, corn, beer, and cilantro. Cover and cook on Low for 6 hours or High for 2 hours.

This recipe was pretty good. I might have used shredded chicken instead. The beer added very good flavor to it!
