Slow Cooker Turkey and Vegetable Soup

Cuban sandwiches can be made in a variety of ways. This is how I construct my Cuban, or Cubano. Pulled pork is a favorite of mine. It could also be carnitas. Here is a broad notion; however, you can adjust the ingredients and amounts to suit your own tastes.

Servings: 8
Yield: 8 servings

Ingredients

  1. 1 pound ground turkey
  2. ½ cup diced onion
  3. 4 cups water, or more to taste
  4. 2 (14.5 ounce) cans diced tomatoes with juice
  5. 2 medium potatoes, peeled and cubed
  6. 2 medium carrots, chopped
  7. 1 medium red bell pepper, chopped
  8. 2 stalks celery, chopped
  9. 1 cup dried lentils
  10. 1 cup chopped broccoli
  11. 1 cup frozen corn
  12. ¼ cup molasses
  13. 4 bay leaves
  14. 3 cubes beef bouillon
  15. 1 teaspoon dried basil
  16. 1 teaspoon salt
  17. 1 teaspoon ground black pepper

Instructions

  1. Heat a large skillet over medium-high heat. Cook and stir ground turkey in the hot skillet until browned and crumbly, 5 to 7 minutes. Add onion and saute until soft and translucent, about 5 minutes. Transfer to a slow cooker.
  2. Add 4 cups water, diced tomatoes with juice, potatoes, carrots, bell pepper, celery, lentils, broccoli, frozen corn, molasses, bay leaves, bouillon cubes, basil, salt, and pepper.
  3. Cook on Low for 6 to 8 hours or on High for 5 to 6 hours, adding up to 2 cups more water depending on how thick you want the soup.
  4. You can use ground beef instead of turkey, if desired.

Super easy. The molasses added a nice flavor.

Easy to put together and tasted good overall. I didn’t add the peppers or the broccoli because the pot was getting very full. I added garlic salt and hot pepper sauce just to flavor it more to our tastes.
