Slow Cooker Taco Turkey Soup

Ingredients

  1. 1 tablespoon olive oil
  2. 1 pound ground turkey
  3. 1 medium onion, chopped
  4. 1 lightly packed fresh cilantro (leaves and tender stems)
  5. 2 cups water
  6. 1 (16 ounce) can chili beans, undrained
  7. 1 (15 ounce) can black beans, undrained
  8. 1 (15 ounce) can whole kernel corn, undrained
  9. 1 (15 ounce) can petite diced tomatoes, undrained
  10. 1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®), undrained
  11. 1 (8 ounce) can tomato sauce
  12. 1 tablespoon ground cumin
  13. 1 tablespoon seasoned salt
  14. ½ teaspoon seasoned pepper
  15. ½ teaspoon dried oregano
  16. ½ teaspoon salt-free seasoning blend (such as Mrs. Dash® Chipotle seasoning)

Instructions

  1. Heat oil in a skillet over medium heat. Add turkey, onion, and chile pepper; cook and stir until turkey is crumbly and no longer pink, 5 to 7 minutes. Transfer mixture (do not drain) to a slow cooker.
  2. Add water, chili beans, black beans, corn, tomatoes, tomatoes and green chiles, tomato sauce, cumin, seasoned salt, seasoned pepper, oregano, and salt-free seasoning blend to the slow cooker. Stir well to blend. Cover and cook on Low for 8 hours.

I made this recipe but had some issues finding certain ingredients, the Anaheim Chile pepper, seasoned pepper and, Chipotle Mrs Dash so made some minor substitutions such as using canned green chiles and creating my own seasoning blends. I also drained and rinsed the beans. The overall soup was good but was tomato heavy in our opinion and could have used more ground turkey.
