How would you enlarge and bloat our Big Fat Greek Salad? by including chicken with herbs, garlic, and lemon. Moreover, some potatoes that were fried until they were crisp, crunchy, and sopped in pan drippings. We could have dubbed this Greek Chicken and Potato Salad, too. But I’ve noticed that a lot of folks these days seem to really enjoy eating from “bowls.”

Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 1 (1.25 ounce) package taco seasoning mix
- 1 (15 ounce) can white beans, undrained
- 1 (15 ounce) can red kidney beans, undrained
- 1 (15 ounce) can white kidney beans, undrained
- 1 (15 ounce) can ranch-style beans, undrained
- 1 (15 ounce) can pinto beans, undrained
- 1 (15 ounce) can black beans, undrained
- 1 (15 ounce) can white hominy, drained
- 1 (10 ounce) can diced tomatoes with green chile peppers
Instructions
- Cook and stir ground beef in a skillet over medium high heat until browned and crumbly, 5 to 10 minutes; drain fat. Transfer beef to a slow cooker and sprinkle with onion and taco seasoning mix.
- Stir white beans, red kidney beans, white kidney beans, ranch-style beans, pinto beans, black beans, hominy, and tomatoes with green chile peppers into beef mixture.
- Cook in the slow cooker set to Low until cooked through and flavors blend, 4 to 5 hours.

Thankyou, Janelleh for this easy recipe. I was scrambling to find a recipe for this week’s Food Bank cooking session. We try to make 50 every week. So, here’s my crowd-worthy version. 5 lbs hamburg, 1 bag white onion, 1 package seeded jalapenos, minced, 6 28oz cans diced or crushed tomatoes, 5 packages low-sodium taco mix, 15 19oz cans of assorted beans (disclaimer–I accidentally drained and rinsed them). I added about 5 cans of water, but next time, I’ll use chicken stock and not drain the beans. It tasted great, and I would have added sour cream as a garnish.
Yummy! I read reviews and added a can of drained fire-roasted corn and a can of diced tomatoes w/habanero (we like spice!). Topped with a little cheese and crushed tortillas. Husband says it’s a keeper!!!

this was so good. I made it for the whole office (approx. 10-15 people). I omitted 1 can of beans because it wouldn’t all fit in the crock pot. Will definitely be making this again
This is the second time I have made this great soup for a cold winter day. This time I didn’t have any taco seasoning so made my own, Taco Seasoning 1, also from this site. My hubby liked it better than the first soup and he’s been asking for it again.
Great recipe. I used ground chicken instead of beef and added a little habanero spice to give it an extra kick. It certainly worked. I served it with tortilla chips and added a dollop of sour cream. Delicious!!!

I doubled it thinking 1 lb of hamburger wouldn’t feed my family of 4, then i actually had too much and wasn’t able to put double of the beans. Its enough. Was very good and looking for the cold weather to hit so i can make it again.
Easy to make, tastes great without having to doctor up the ingredients … what more could you ask for? Will definitely be making again.

We both liked this! We added home canned bananna peppers. We could not find ranch beans and it was fine. In our bowls we topped the soup with sharp cheddar cheese and sour cream and had nachos on the side. Yum!
We thought this was great! I made it as is first, then after tasting it added the other spices suggested by others and this will easily be a go to recipe in a pinch. It was quick and easy to make and I didn’t even have to defrost the chicken. Next time I will top with lime and cilantro.
Very tasty, very hearty meal. I added shredded lettuce and shredded cheddar cheese to mine.

great but did modify it by reducing amount of beans. Used zesty pinto and seasoned black and northern white beans, and reg pinto beans. Added diced tomatoes and can of tomato sauce substituted about 2TB chili seasoning mix instead of taco seasoning mix in recepie
My family loved it. Our nine year old daughter couldn’t get enough!!! I added a can of corn and a can of green chilies. Next time I will substitute chicken for the beef.
