Slow Cooker Chicken and Noodles

It’s quite simple to prepare this chicken and noodles soup in the crockpot while at work or on a busy day. It can be made soupier by adding more broth, but occasionally I like to thicken the liquid by stirring in a little water and cornstarch combination and cooking it until it becomes thick. It tastes nice when put on top of mashed potatoes.

Ingredients

  1. 4 skinless, boneless chicken breast halves
  2. 6 cups water
  3. 1 onion, chopped
  4. 2 stalks celery, chopped (Optional)
  5. salt and pepper to taste
  6. 1 (12 ounce) package frozen egg noodles

Instructions

  1. Place chicken, water, onion, celery, salt, and pepper into a slow cooker. Set temperature to Low and cook for 6 to 8 hours.
  2. When chicken is tender, remove from the slow cooker and tear or chop into bite-sized pieces. Set aside in a small casserole dish to keep warm.
  3. Turn the slow cooker up to High and stir in frozen egg noodles. Cook until noodles are tender then return chicken pieces to broth. Adjust seasonings to taste.

tooke the advice and added regular egg noodles the last 15 minutes. I did not use chic broth, just water. Addes some seasonings, pepper, poultry, garlic, parsely and salt to taste. Also aded chopped carrots. Super easy, love being able to use frozen chicken and set it and come back for supper!

Delicious soup! I used chicken breasts and chicken thighs. Used low sodium chicken broth instead of water. Added frozen carrots, frozen corn, no celery. Added poultry seasoning, garlic salt, tumeric, and bay leaves. Used bag of dry egg noodles instead of frozen.

I really love this recipe! There are so many variations you can try. I added a half bag of baby carrots. I substituted 4 skinless thighs. I added 5 cups of water and 1 cup of chicken broth. The taste was perfect!

Like others recommended, I replaced chicken broth for some of the water, added 1T poultry seasoning , carrots and garlic powder and cut back to 3 chicken breasts. I didn’t use any noodles. I will probably tweak it more the next time I make it but we all liked it. Oh, I added homemade matzoh balls!

Very good, we found we would like it with another pkg of noodles and a little more water. There was not enough noodles for the amount of chicken. But it was excellent flavor.

The soup turned out delicious! Although next time I’ll use only 1/2 an onion rather than a full one. I added 4-5 diagonally cut carrots and 4-5 Celery stalks. I also used a small pack of about 6 chicken wings with skin along with with chicken breast strips cut into squares. I also added 4 cloves of garlic, garlic salt, a dusting of paprika and used 4 Cups of left over Chicken Bone Broth from OssoGood Broth with 2Cups Of Water. I would’ve used all bone broth but I didn’t have enough. I also added 3 chicken (Knorr – 1 Cube per 2Cups of liquid) bouillon cubes. I cooked everything in the crockpot on low for the first 4 hours and raised it to high for the last 4 hours. I couldn’t find frozen or fresh egg noodles so I used the regular dry ones, which I prepared in a separate pot, and added to the soup at the end. Yummy!

It came out great, but I did ADD a few extras, chopped onions and celery, and frozen mixed vegetables. Also, regular dry egg noodles during the 20 minutes. It was delicious.

I added 1 teaspoon of thyme leaves before I started cooking this recipe. I was skeptical about the “frozen noodles”- I put my package of noodles in the freezer for 2 hours, then added them to the broth. Delicious recipe. It’s a keeper.
