Slow Cooker Caribou Stew

Delicious stew recipe for the slow cooker from Western Alaska. Use cattle, moose, or other regional meat to make it more suited to your area. Put it in the slow cooker or on the wood stove, and allow the savory aroma of warmth and comfort to permeate your house.

Ingredients

  1. ½ cup all-purpose flour
  2. 2 ½ pounds moose meat, cut into cubes
  3. 1 tablespoon vegetable oil, or as needed
  4. 4 cups beef stock
  5. 3 large potatoes, peeled and cubed
  6. 4 carrots, cut into 1-inch pieces
  7. 4 stalks celery, cut into 1-inch pieces
  8. 1 large onion, chopped
  9. 1 (14 ounce) can diced tomatoes with juice
  10. 2 teaspoons dried oregano
  11. 2 teaspoons Worcestershire sauce
  12. 1 ½ teaspoons dried thyme
  13. 1 teaspoon minced garlic
  14. 2 bay leaves

Instructions

  1. Place flour in a shallow bowl; press meat into the flour to coat and shake off the excess flour.
  2. Heat vegetable oil in a large skillet over medium; cook and stir meat until browned on all sides, about 5 minutes. Transfer meat to a large slow cooker. Pour beef stock over meat in slow cooker; add potatoes, carrots, celery, onion, diced tomatoes with juice, oregano, Worcestershire sauce, thyme, garlic, and bay leaves. Gently stir mixture.
  3. Cook on Low for 8 hours.
  4. The stew can also be cooked on the stove in a Dutch oven.

It was quite bland at first. I added some Montreal Steak Spice, extra garlic and a dash of chili powder. Gave it some zing and it was the rave of our potluck.

Don’t have Caribou in SC but lots of White Tail deer. Used this recipe but with venison and it was great. Cooked for 8 hrs in the slow cooker and venison was perfect. Added 1/2 cup of red wine to give a fuller flavor.

I have never had or cooked caribou before, this was my very first time. I was a bit nervous after hearing so many mixed opinions about caribou meat -gamey/tough/dry etc. A friend gave us a nice caribou shoulder so..here we are..eating this Caribou stew for dinner!! I made this EXACTLY as written. I have to say….I would have thought it was beef stew if I didn’t know better. This made a great big crockpot full of stew…my in laws came over to have dinner with us and they too enjoyed it and thought it was beef.
