Skinny Soup

My father invented a recipe for skinny soup that is essentially guilt-free when dieting. Consume as much as you like!

Ingredients

  1. 8 cups vegetable broth
  2. 1 head cabbage, coarsely chopped
  3. 2 cups chopped celery
  4. 2 medium yellow onions, sliced lengthwise
  5. 1 cup diced mushrooms
  6. 1 cup fresh bean sprouts
  7. 3 green onions, sliced
  8. 2 jalapeno peppers, diced
  9. 1 dash Sriracha sauce, or to taste

Instructions

  1. Combine vegetable broth, cabbage, celery, onions, and mushrooms in a large stockpot. Bring to a boil; reduce heat and simmer, covered, for 20 minutes.
  2. Place 1/4 cup bean sprouts into 4 serving bowls. Divide green onions and jalapenos among the bowls. Ladle soup into each bowl and add Sriracha sauce. Serve immediately.
  3. Cook’s Notes:
  4. Feel free to add pre-cooked sausage or shredded chicken to make this a heartier, but less healthy, dish.
  5. You can substitute chicken broth for vegetable broth, if desired.
