Ingredients

  1. 2 tablespoons butter
  2. 2 tablespoons all-purpose flour
  3. ¼ teaspoon dried basil
  4. ¼ teaspoon ground black pepper
  5. ⅛ teaspoon salt
  6. 1 cup chicken broth
  7. 1 cup cubed potato
  8. ½ cup chopped carrot
  9. ¼ cup sliced green onions
  10. 1 cup half-and-half
  11. ¾ cup frozen corn, thawed

Instructions

  1. Melt butter in a saucepan over medium heat; stir flour, basil, pepper, and salt into butter and pour in chicken broth. Cook and stir broth mixture until thickened and boiling, 5 to 7 minutes. Stir potato, carrot, and green onions into broth mixture; bring to a boil. Reduce heat and simmer until potatoes are mostly tender, 10 to 15 minutes.
  2. Stir half-and-half and corn into broth mixture; cook and stir until chowder is heated through, about 5 more minutes.
  3. If you like meat, 3/4 cup diced ham or chicken is quite good. That will make it 4 servings. I like to serve with green salad and crusty bread.

Excellent and was a perfect quantity for two. Also, I used veggies broth instead of chicken to keep it vegetarian. Next time I will use shelled edamame instead of corn for a punch of protein.

I added a large stalk of celery chopped, a large jalapeno chopped finely, and a bay leaf. I would definitively make it again. We loved it!

I followed this recipe, though since I was using more vegetables (broccoli and red bell peppers that needed used), I increased the chicken broth (and used stock) and used an entire carton. I subbed white pepper for black. Upon tasting, I found this to be a bit bland, so I added a good handful of shredded cheddar; this hit the mark. As written, “3” stars; with the addition of cheddar, “4”. THANKS for the recipe!
