This flavorful ham and broccoli quiche is suitable for breakfast, lunch, or dinner. The leftovers are equally delicious the next day. Use your favorite cheese.

Ingredients

  1. 2 tablespoons extra-virgin olive oil
  2. 3 cups chopped fresh rhubarb (1/2-inch pieces)
  3. 1 onion, chopped
  4. 1 large red bell pepper, chopped
  5. 1 teaspoon sea salt
  6. 1 ½ pounds ground turkey
  7. 3 cloves garlic, minced
  8. 2 tablespoons chili powder
  9. 2 tablespoons unsweetened cocoa powder
  10. 1 tablespoon white sugar
  11. 1 ½ teaspoons ground cumin
  12. ½ teaspoon ground cinnamon
  13. ¼ teaspoon ground allspice
  14. ⅛ teaspoon ground cayenne pepper
  15. 2 (15 ounce) cans black beans, rinsed and drained
  16. 2 (14.5 ounce) cans diced tomatoes
  17. 1 cup frozen white corn
  18. salt and ground black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add rhubarb, onion, red bell pepper, and salt; cook and stir until tender, about 5 minutes. Add ground turkey and garlic and cook until turkey starts to brown, about 5 minutes.
  2. Stir chili powder, cocoa powder, white sugar, cumin, cinnamon, allspice, and cayenne pepper into the pot; cook and stir for 3 minutes. Add blacks beans, diced tomatoes, and corn; mix well to combine. Bring chili to a boil, reduce heat and simmer, covered, until thickened and flavors are combined, about 30 minutes. Season with salt and black pepper.
  3. Substitute ground beef for the turkey if preferred.
  4. Because this is a thick chili, make sure to keep the lid on while it simmers.

I used one small can diced tomatoes and one small can of fire roasted tomatoes with green chile’s in addition to two very coarsely chopped fresh tomatoes. This is very easy to put together.

I gave this recipe 3 stars because it was good but not really all that special. I was excited to try rhubarb and also the cocoa powder was intriguing but there just wasn’t the wow factor I was looking for.

Good but definitely needs more liquid! I wanted something savory using my garden’s rhubarb and came across this. For the most part, I followed the recipe but found that liquid was needed after adding all the ingredients listed in step 2. I google’d “rhubarb chili”, found other recipes online, and saw they all listed 2 or 3 cups of broth so I added 3 cups chicken broth. My other changes made due to what I had on hand: 1 pound lean ground beef (rather than turkey); 2 cans of Great Northern Beans (rather than black), 1 can diced tomatoes and halved fresh cherry tomatoes (rather than 2 cans) & 2 smallish ears fresh corn (rather than 1 cup frozen). Lastly, I increased a few spices a bit for more flavor – 4 garlic cloves & 1/4 teaspoon cayenne pepper. Good the first day but better the next.
