This quinoa jambalaya is better and healthier than Zatarain’s.

Ingredients

  1. 1 tablespoon vegetable oil, or as needed
  2. 1 pound kielbasa (Polish) sausage, halved lengthwise and sliced
  3. ½ sweet onion (such as Vidalia®), diced
  4. 6 miniature multi-colored sweet peppers, diced
  5. 1 teaspoon dried oregano
  6. 1 teaspoon dried thyme
  7. ½ teaspoon cayenne pepper
  8. ¼ teaspoon celery salt
  9. 1 pinch red pepper flakes
  10. 1 cup quinoa
  11. 2 cups chicken broth
  12. ½ cup marinara sauce

Instructions

  1. Heat oil in a large skillet over medium heat; cook and stir sausage until browned, about 5 minutes. Add onion to sausage; cook and stir until slightly browned, about 5 minutes. Stir sweet pepper, oregano, thyme, cayenne pepper, celery salt, and red pepper flakes into sausage mixture; cook and stir until fragrant, 1 to 2 minutes.
  2. Mix quinoa into sausage mixture; cook and stir until quinoa is slightly toasted, about 1 minute. Pour broth and marinara sauce over quinoa mixture. Cover skillet and simmer until quinoa is tender, about 15 minutes.
  3. Feel free to add shrimp, diced chicken, or sub in extra veggies.
  4. Add more or less cayenne for your heat preference, or drizzle with Sriracha for a real kick in the pants.

Easy to make and very tasty. I added more seasonings like, Slap Ya Momma cajun seasoning, garlic powder, seasoned salt instead of celery salt, and Old Bay seasoning. I subbed poblano peppers and added diced tomatoes. It turned out great

I made it and loved it. I got peel-on shrimp that had been deveined. Next time I’ll get the deveined and PEELED shrimp, with tail on. That will make it easier to eat. Lovely flavors and great way to use quinoa!

I made this, it was so good. Don’t expect traditional jambalaya, but this is a great dish. I added 1 stalk of celery and added it when I added the onion. I also added 1 can of diced tomatoes (rotels).

Delicious dish. I switched it up a bit – used 1/2 turkey kielbasa, 1/2 shrimp (cooked them first in oil and then removed); regular bell pepper instead of sweet peppers; an entire bag of mixed frozen veggies (corn, peas, carrots, beans); 2 handfuls of spinach; 3 cloves of garlic. Also added 2 tsp of chili garlic sauce at the end because after adding in all the other ingredients, still seemed like something was missing and it was a little more heat. One thing I will do differently next time is to add less chicken broth- the quinoa I used called for 1 and 1/4 cup of water to make 1 cup of quinoa. The 2 cups of broth were too much and I had to spend a lot of extra time reducing the liquid. Seems like might be a better idea to follow liquid quantity closer to the amount needed for the quinoa. Will definitely make again!

Very yummy! I added celery, cooking the veggies first then browning the sausage. I also added a little paprika to the spice mix. It was easy and delicious. The next day we had the leftovers for lunch and a meal I thought was delicious was even better.

Easy recipe! I used Field Roast Chipotle Mexican veggie sausage and also added a couple stalks of celery. Tasted super yummy and I’m definitely going to use this recipe again the future!

My family loves this dish! Even my three young ones who are normally picky eaters. I don’t put in the spicy because my kids are not fans of hot, but I also add shrimp and it is AMAZING!!

I made this recipe in a sauce pan, and added shrimp. Let it boil for around 20 minutes, and it turned out great! I’m pretty much a wimp when it comes to spicy, so I substituted Cajun seasoning, and halved it so it has flavor, but it’s not overwhelming. I’m so happy I found this recipe!

This was better than I expected while I was making it. The flavors worked well together and the quinoa complimented everything else nicely. I added chicken and shrimp and my kids ate it but weren’t thrilled like some other recipes I’ve made from here

It was good, but a little lacking in flavor. I used three small turkey breakfast sausage to have less meat and then at the end added 1 cup of cream of mushroom soup to make it more creamy and then added rice and chicken broth for more starchy substance.

This is the first meal I have ever made that I couldn’t eat. Not just that, I threw out the left overs… I can’t even think of a way to make this better without getting rid of core ingredients.
