Quick Easy Vegan Chili

Ingredients

  1. 1 tablespoon canola oil
  2. ½ cup chopped onion
  3. ½ cup chopped green bell pepper
  4. ½ cup frozen corn
  5. ½ cup sliced fresh mushrooms
  6. 1 (16 ounce) can chili beans
  7. 1 (16 ounce) jar salsa
  8. 1 (1.25 ounce) package chili seasoning mix
  9. 2 tablespoons prepared yellow mustard
  10. 1 pinch salt and ground black pepper to taste

Instructions

  1. Heat oil in a large skillet over medium heat. Add onion, green bell pepper, corn, and mushrooms; cook and stir until softened and heated through, 5 to 10 minutes. Add chili beans, salsa, chili seasoning, and mustard. Reduce heat to low and simmer, stirring occasionally, until flavors combine, 10 to 15 minutes.
  2. Some store-bought items may contain trace amounts of animal products. Make sure to check nutrition facts and ingredients of products used.
  3. Substitute cooked TVP or tofu for the vegetables if desired, or use a mix.
  4. Cook on Low in a slow cooker if preferred.
