Ingredients
- 1 (14.5 ounce) can diced tomatoes
- 1 (14 ounce) can chicken broth
- 1 (11.5 ounce) can tomato-vegetable juice cocktail
- 2 carrots, sliced
- 2 stalks celery, diced
- 1 large potato, diced
- 1 cup chopped fresh green beans
- 1 cup fresh corn kernels
- 1 cup water
- salt and pepper to taste
- 1 pinch Creole seasoning, or more to taste
Instructions
- Gather all ingredients.

- Combine tomatoes, chicken broth, tomato juice, carrots, celery, potato, green beans, corn, and water in a large stockpot. Season with salt, pepper, and Creole seasoning.

I did everything the way you described. I did not add Cajun but I added this…. 2 ribeyes diced, garlic powder, pepper, oregano, two bay leaves, Worcestershire sauce, beef, broth, and one beef bouillon cube with an extra cup of water and a pinch of sugar. Absolutely delicious !
Very good comfort food. Only changed 2 things. I used vegetable broth instead. And I sautéed my onion and celery before adding them. Hmm hmm Very good.
Like shawnsmom stated I sauted some onions and garlic. I added some mushrooms, a chicken bullion cube and a pinch of sugar to make it not so acidic. My family doesn’t like celery so I just added celery salt instead of table salt. It turned out amazing! Thank you for sharing this quick and easy recipe. It is a permanent addition to my meals.
Fast. Easy. Delicious. I found the vegetables took longer than 30 minutes to soften & then I had to add more broth and tomato juice.
I did exactly what it said, but put other seasonings such as cumin, little bit of Cajon seasoning for a kick, and little pinch of sage. It turned out great! I paired it with a warm, toasty, grilled cheese. My family loves it!
I make this on chilly days. It’s quick and easy to make. I made it as written the first time. After that I changed it for our tastes. I use beef broth instead of chicken and I like it better with beef tips instead of chicken. I have added different vegetables, usually leftover from other meals and it always turns out well. I do go heavier on the spices but thats just our preference. It is easy to modify and always seems to taste wonderful.
A nice, simple and healthy soup to throw together for lunches. This makes very large portions – I got 8 good sized lunches out of this. I divided up half of it into containers and froze the rest. I felt this could use more seasoning though, and next time I’d omit the water and just use all broth.
I used chicken boyon, fresh cut carrots onion potatoes bell peppers tomatoes canned green beans and corn. Added different salts lots of diced garlic and a little pepper and parsley for flavoring. I also added linguine noodles and it was delicious! Thanks for the inspiration! Great fridge clear out for a delicious dinner.
Great recipe but technically when I fix a vegetable soup, I don’t use poultry, meat, or fish for the stock, it’s only veggies, pure veggie stock/broth with my choice of seasoning.

I love making this..I do make it on a larger scale-a huge pot of it, and I add stew meat pieces to it to make it a veggie/beef soup and rice to thicken it.. my family loves it..the creole seasoning adds a great kick to it and I never would have thought to try it. Very delicious
I really enjoyed this recipe. However I didn’t use the actual recipe. I used it as a know how for my own vegetable soup, because I didn’t know how to make soup. But this is a great place for how to make soup.
Family continues to like this an eat it down. Didn’t have tomato juice, so made my own out of tomato puree adding celery salt, and onion powder. Also didn’t have vegetable broth so used beef broth. All fresh veggies.

This recipe is one of the best surprise in a recipe that I have ever tried. It is the best vegetable soup I’ve ever made . You can add any veggie to it and it tastes great! The Kirkland Stir Fry Vegetable Blend is what I use. I also agree with a previous post that the magic bullet for flavor is TONY CHACHERE’S Original Creole Seasoning. JUST DELICIOUS! The Cajun seasoning was too overwhelming. They didn’t know how much to put in it, so I, in turn, put too much in. I had to discard it.
Very good basic recipe. The second time I made it I subbed canellini beans for the green beans and sweet potato instead of regular potato. I added sautéed diced onion, celery, bell pepper and garlic as well as some Italian spice to the mix. Husband liked the second version better because of the sweet potatoes.
I follow the basic recipe, but like so many others, I made it my own. I make it as vegetable soup, but I sometimes add chicken to make a hearty chicken vegetable soup. Instead of V8, I use Zing-Zang Bloody Mary mix. I do not use any water, only chicken broth and Zing Zang. Always turns out great, and one of the favorites in my house.
