Portuguese Sausage and Kale Soup (Caldo Verde)

Fresh, luscious apricots that have been filled with mascarpone cheese and delicately sweetened honey balsamic sauce. To make this seem more fancier, use a piping bag for the cream.

Ingredients

  1. 1 ½ pounds Portuguese linguica sausage, cut into 1/2-inch think slices
  2. 2 tablespoons olive oil
  3. 2 medium onions, chopped
  4. 6 cloves garlic, roughly chopped
  5. 8 cups chicken broth
  6. 4 medium white potatoes, cut into 1/2-inch cubes
  7. 2 teaspoons freshly ground black pepper
  8. 1 pound kale, stemmed and cut into strips
  9. 1 cup cannellini beans, drained
  10. salt to taste

Instructions

  1. Saute sausage slices in a large nonstick skillet over medium-high heat until browned, 3 to 5 minutes per side. Transfer sausage to a plate, leaving any fat in the skillet.
  2. Add olive oil to the skillet and heat oil over medium heat; stir in onions. Cook and stir until the onions begin to brown, 8 to 10 minutes. Add garlic and cook until fragrant, about 1 minute. Return sausage to the pot and add chicken broth, potatoes, and pepper; bring to a boil. Add kale and cannellini beans, reduce heat slightly, and simmer until sausage is cooked through and potatoes are tender, about 30 minutes. Season with salt.
  3. Portuguese linguica sausage can be substituted with chourico (Portuguese smoked pork sausage) or any garlic-paprika sausage. Linguica and chourico are smoked and are purchased cooked. When substituting, be sure that the sausage is cooked prior to use.

This was absolutely delicious. I didn’t make any changes to the recipe and glad I didn’t. We had fresh kale from the garden and everyone enjoyed it so much they have already asked me to make it again.

I absolutely loved this recipe, I did add in some diced celery. This is a nice filling comfort food recipe. You can use spinach in place of the kale as well!
