Ingredients

  1. 3 cups chicken broth
  2. 2 cups water
  3. 2 (8 ounce) bone-in pork chops
  4. 2 tablespoons soy sauce
  5. 1 teaspoon paprika
  6. 1 teaspoon dried oregano
  7. 1 teaspoon garlic powder
  8. ½ teaspoon salt
  9. ½ teaspoon ground black pepper
  10. ½ teaspoon chili powder
  11. 1 large bay leaf
  12. ¼ cup flour
  13. 3 medium potatoes, peeled and cubed
  14. 1 cup chopped broccoli
  15. 1 medium carrot, diced
  16. 1 medium onion, diced
  17. 2 stalks celery, diced

Instructions

  1. Bring broth, water, pork chops, soy sauce, paprika, oregano, garlic powder, salt, pepper, chili powder, and bay leaf to a boil, uncovered, in a large stockpot over medium-high heat. Reduce the heat to medium-low and simmer for 1 hour, then remove from the heat. Transfer 3/4 cup cooking broth to a 2-cup liquid measure. Transfer pork chops to a cutting board to cool, about 20 minutes.
  2. Whisk flour into reserved cooking liquid and set aside. Remove and discard bones from cooled pork chops. Shred meat or chop into bite-sized pieces.
  3. Add potato, broccoli, carrot, onion, celery, and cooked pork to the stockpot and bring to a boil. Stir in flour mixture, reduce the heat, and simmer for 1 hour.
  4. Remove and discard bay leaf, then gently mash potatoes. Serve immediately.

My family enjoyed this soup. It was filling and my fussy daughter who hats “ spicy” food, loved it. I stuck to the recipe except to double it, however , I elected to not mash the potatoes.

It was okay. Nothing special. Made my own pork bone broth instead of using chicken broth and didn’t mash the potatoes, otherwise followed recipe. It’s a good way to stretch a couple of pork chops, but nothing I’ll likely make again.

Thanks for the dinner Idea, instead using chicken stock I made my own pork stock using pork neck bones, and I topped it with smoked pork tenderloin. It was delicious.

This soup is delicious if you don’t mash the potatoes. I saw a review that said this soup is tasteless, and that’s true if you mash the potatoes-it becomes very bland. However, if you just leave them chopped it’s tasty.

I used corn instead of broccoli, and the soup really had no flavor. It smelled fine, yet it had no flavor, I even checked with my mom in case my taste buds were off for some reason, and she agreed it had no flavor yet smelled good.

I had to add more liquid, it simmered down a lot. I read a review that suggested leaving out the soy sauce so, I left that out. I salted and peppered the pork chops and browned them first. I didn’t mash the potatoes, just left them as they were. It was a delicious outcome and both my husband and I loved it. I will make it again!

It was great with two changes.. used leftovers from the day before and used 1 tablespoon corn starch rather than 2 tablespoons flour.

I was missing some ingredients so I substituted some beef rib bone broth from the other night, and tried worcestershire sauce in place of soy (it worked well!), left out broccoli, bay leaves, and celery, and doubled the garlic and salt as is standard in this kitchen. It was delicious. I found that it was ready before the cook time was up. 40 minutes on the second cooking was more than enough. Had to order myself to not go for 3rds so this is definitely a winner.

I made this tonight and my family really liked it. I did make a couple changes, hence the 4 vs. 5 stars. I used the flour, but instead of potatoes I used rice. I used 2 c of the boiling liquid to make it (and added an extra c of chicken broth and water) prior to boiling. I also added 3 cloves of garlic & I didn’t have broccoli on hand. Next time I make this I will use 1 stalk of celery & 2 carrots along w/ peas, corn, or green beans. Ooo, maybe fresh baby spinach? ! My kids do not enjoy broccoli & prefer to use other veggies to avoid a dinner battle. Thanks for this hearty recipe.

i used 2 cups chicken and 1 cup beef broth but add more that 2 cups water. 5 cups of liquid is not even close to enough with 2 hours of simmering

I really loved this recipe! I was looking for a pork posole recipe because I was missing the special red peppers and didn’t want to mess with the whole process. This was perfect. I substituted hominy for the potatos, and left out the celery, brocolli, soy sauce and flour. I used onion powder instead of onions for ease of preparation. The result was a fusion Mexican-American Red Pork posole soup using household spices for the red pepper heat. Genius.

Love this soup!!! I didn’t add the flour. I also didn’t have pork chops, I had pork loin chunks and just used those. Very easy recipe to follow!! You can really make it your own!! It’s a good base.
