Serve this delicious soup with garlic toast and it might be a meal in and of itself.

Ingredients

  1. 2 tablespoons olive oil
  2. 1 cup chopped onion
  3. 3 cloves garlic, minced
  4. 2 (14.5 ounce) cans stewed tomatoes
  5. 3 cups low-sodium chicken broth
  6. 1 (15 ounce) can cannellini beans
  7. ¼ cup chopped fresh parsley
  8. 1 teaspoon dried basil leaves
  9. ¼ teaspoon ground black pepper
  10. ¼ pound seashell pasta

Instructions

  1. Heat oil in 4-quart Dutch oven over medium heat until hot. Add onion and garlic and cook for 5 minutes or until onion is tender.
  2. Add undrained tomatoes, undrained cannellini beans, chicken broth, parsley, basil and pepper to Dutch oven and bring to a boil over high heat, stirring occasionally. Let boil for approximately 1 minute and then let simmer for 10 minutes, covered.
  3. Add pasta to Dutch oven and simmer approximately 10 to 12 minutes or until pasta is tender. Serve immediately and enjoy.

I followed the recipe and browned and added 1 lb of bulk Italian sausage to the soup. It really adds flavor. We love it!

This is delicious! I didn’t have any small pasta, so I used farfalle instead. If anyone else needs to use a larger pasta, boil it separately from the soup. All the broth was soaked up by the farfalle when I cooked it in with the fagioli. Even then it was still great! But I would not cook larger noodles in the same pot as the soup. 10/10 would soup again.

Amazing, a wholesome, healthy meat free option and the kids love it! Who could ask for more? The only things I added were a 1/2 tsp salt and 2 tablespoons butter to a doubled recipe for a big family. Delicious.

Oooo yummy! This is full of flavor. I used veggie broth instead of chicken broth and substituted a can of spicy tomatoes for the plain ones. This is definitely a keeper.

This was very good and pretty authentic! My husband likes thicker soups so I added a small can of tomato paste. I think the beans are also a little light compared to how my Italian grandma used to make it so I will add two cans next time.

pretty tasty- added about a tablespoon of tomato paste some oregano . Only made 4 servings. Parsley did not really add much. Will be a good colder weather meal.

We loved this soup! Very easy to throw together but tastes like it took hours. I used crushed tomatoes instead of stewed, & I used ditalini pasta since I had it on hand. I also added a couple extra garlic cloves, diced zucchini, & fresh spinach. I was trying to clean out the refrigerator! I almost forgot. I added about a teaspoon of Tutto Calabria crushed hot chili peppers for some zing! So delicious and so filling with toasted garlic bread. And I love that this recipe is so healthy. Thanks Corwynn!

Followed the recipe as is. I save the rind from parmigiano reggiano cheese and cooked it in the soup. Amazing! Used dittalini for the pasta.

Turned out well. I took the advice from others and added extra garlic, 4 cups chicken broth and dried plus fresh basil. Next time I will add less tomatoes as I used crushed and one can would have been enough doing it this way.

I used it as a template and made substitutions based on similar items I had in my pantry. It was very flavorful and filling! No onion or garlic because I have to avoid them. Mexican style stewed tomatoes Spicy black beans instead of the cannellini beans Added a can of corn Used 1T Better-then-Bullion Chicken Flavor with 3 c. water instead of broth Dried parsley instead of fresh Orrechiette pasta instead of shells Sprinkled shredded cheese on top for added yumminess.

I try to always make a recipe exactly as it is written the first time, which I did with this. I will make some adjustments next time, as it seemed a little too bland for my taste. Not sure what addition I will make. Perhaps some chopped spinach or a bit of shredded, roasted chicken, or both.

I made it as given with the two exceptions of adding Italian Sausage with a little more broth to compensate(we like meat in ours) and dried instead of fresh parsley. Very good, very fast and I’ll be making it frequently.
